Blueberry Basil Compote for Pancakes
It’s Summertime and blueberry season! What better way to enjoy some fresh juicy blueberries than on top of pancakes. This blueberry basil sauce is fast and easy to make. The prep and cook time is less than twenty minutes total. Fruit compote is amazing served right away as a warm runny sauce but if you prefer a thicker sauce make it the night before. As the sauce chills in the fridge overnight it will thicken. We love using locally grown fruit when it’s in season. Frozen berries can also be used when out of season. Have you ever been to a local farm where you can pick the berries yourself?…

Chopped Seitan Salad
I love a good salad! The chopped seitan makes this salad more of a full meal than just a side. Plus it’s a great use for leftover seitan. Waste not want not. We made seitan ribs this past weekend and chopped up the leftovers. The smoky BBQ flavor was amazing on the Chopped Seitan Salad. Yum! If you have a food processor use it to chop the seitan. It shreds it in to fine little piece and the texture is really nice. Don’t have a food processor or don’t want to drag it out? No problem! Just chop it up finely with a knife. You may not get the same…

BBQ Peach Pizza
It is a little known fact that I love pizza and could eat it everyday. I love to experiment with different flavors but the idea for this BBQ Peach Pizza actually came from a local restaurant. The local pizza joint, to remain nameless, was offering a special pizza that sounded amazing. It was a BBQ Peach Pizza with Andouille Sausage. When I asked the waitress if I could order it without the sausage she came back to the table and said “No, the chef won’t make the peach pizza without the meat on it because then it would just basically be desert pizza.” WTF?!? Needless to say I was pissed.…

Vegan Blackberry Cobbler
Last weekend our little local farmers market had a blackberry and blueberry festival. I am a sucker for fresh summer berries. So of course we had to stop by and check it out. Several farms had pints of blueberries but only a few had blackberries. The berries they had were huge! Like the size of my thumb! Ok maybe not that big but close to it. More important than size they were delicious and juicy. I bought enough berries to make a Vegan Blackberry Cobbler and to munch on fresh berries all week! I love cooking in cast iron. Our cast iron skillets were passed down to us from Eric’s…

Oven Fried Cauliflower
I love the crunch of fried foods but hate the grease and mess of frying things. Let’s not even start talk about the calories in fried foods. Oven Baking or Air Frying is totally the way to go at home. It’s so much healthier and easier. Way less clean up involved. I rarely fry food at home any more. We used to have an Air Fryer, and I loved it until it broke. That was a sad sad day. Luckily our new oven is also a convection oven. I have tested this recipe for Oven Fried Cauliflower by baking normally and using the convection oven setting (like any air fryer).…

Seitan Carne Asada
For our Seitan Carne Asada we wanted to get a juicy but charred flavor. Carne Asada is typically a beef dish but this seitan recipe is a little bit closer to a roasted pork flavor. We love making seitan at home. It’s a great vegan substitute for meat to help fill your plate and give you added protein. Seitan is fun to make especially when you get to grill it. I love grilling in the spring! Plus you can add so many different flavors to it. It’s easy to develop layers of flavor into seitan by simmering, mixing in different ingredients, or marinading it. This recipe is a little time…
