Last weekend our little local farmers market had a blackberry and blueberry festival. I am a sucker for fresh summer berries. So of course we had to stop by and check it out. Several farms had pints of blueberries but only a few had blackberries. The berries they had were huge! Like the size of my thumb! Ok maybe not that big but close to it. More important than size they were delicious and juicy. I bought enough berries to make a Vegan Blackberry Cobbler and to munch on fresh berries all week!

Cooking with Cast Iron

I love cooking in cast iron. Our cast iron skillets were passed down to us from Eric’s family. Cast iron retains and evenly distributes the heat making it perfect for baking. Plus it feels very Southern and I love vintage cookware. This Vegan Blackberry Cobbler bakes in a ten inch diameter cast iron skillet. If you don’t have any cast iron I recommend checking out Lodge Cast Iron because they are made in Tennessee and the company supports eco-responsibility. If you don’t have a cast iron skillet a 8×8 baking dish would be the right size to use but it will effect the baking time.

Tips for the Best Vegan Blackberry Cobbler

  • Don’t Overmix the Batter: When combining your dry ingredients with the plant-based milk and melted vegan butter, mix just until combined. Overmixing can lead to a tougher, more bread-like crust rather than a tender, cake-like one.
  • The Maceration Secret: Letting your blackberries sit with the sugar for 10 minutes (Step 1) is a process called macerating. This draws out the natural juices to create a built-in syrup, ensuring your cobbler isn’t dry.
  • Fresh vs. Frozen Berries: While fresh berries from the farmers market are best, you can use frozen blackberries in a pinch. Do not thaw them first. Toss the frozen berries with the sugar and add a few extra minutes to the baking time.
  • Achieving the Perfect Crust: For an extra-golden and slightly crunchy top, sprinkle a tablespoon of coarse sugar over the batter just before placing the cast iron skillet in the oven.

Ingredients

  • 2 cups blackberries
  • 1 cup vegan sugar
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup melted vegan butter
  • 1 cup plantbased milk

Instructions

  1. In a mixing bowl gently combine the blackberries with the sugar. Then set to the side and let it sit for about 10 minutes.

  2. Pre-heat the oven to 350.

  3. In a second mixing bowl mix together the flour, baking powder, and salt.

  4. Then add 1/2 cup of melted vegan butter and one cup of plantbased milk to the flour. Mix the batter well.

  5. Pour the batter into a 10" cast iron skillet. Evenly distribute the berries and sugar on top of the batter.

  6. Bake at 350 for 45 minutes.
