Vegan Instant Pot BBQ Seitan

We love BBQ! You have to love BBQ in The South. I think it’s a prerequisite to living here. You have to put up with the heat and humidity but you get to enjoy good BBQ year round. BBQ Seitan is easy to make. This recipe is for a ground or pulled style of barbecue that makes a great sandwich.

How to Make Ground BBQ Seitan

Seitan is easy to make but it helps to have a few kitchen tools. If you don’t have an Instant Pot you can bake it but the Instant Pot keeps the seitan extra moist and juicy. The seitan cooks in the instant pot for 40 minutes. After it’s cooked you can allow it to rest in the fridge overnight. This step can be skipped but we have found allowing it rest gives it a denser meatier texture. Whenever you are ready to serve just grind it up in your food processor. If you don’t have a food processor you can chop with a knife but the food processor is really the way to go to get a good ground meat texture. We use this same ground seitan a lot of times when we want to replace ground beef in a recipe.

Let’s Talk BBQ Sauce

Ah the great BBQ sauce debate. Everyone has an opinion and a favorite sauce style. Carolina Mustard, vinegar style, Texas, Kansas City? Me I like variety so I like them all. Lately we have been using Tessemae’s Organic No Sugar Added BBQ sauce that we found at Walmart. I love when a product clearly is labeled as vegan. Makes life a little easier. This stuff is organic, whole 30, keto, gluten free, and vegan. Basically no guilt in drowning my seitan in BBQ sauce. Want to make your own sauce? Go for it! What to Serve with BBQ Seitan?

Keep it simple. Good beer, vegan coleslaw, maybe some chips or fries. Need a good southern coleslaw recipe? Check out Michelle’s recipe on Healthier Steps. I like to make my sandwich on a bun with a little dab of coleslaw and pickle on top. You do you. Make it the way you love to eat BBQ!

Instant Pot BBQ Seitan

Ingredients

For the Seitan

  • 1 1/2 cups Vital Wheat Gluten
  • 15 oz White Kidney Beans one can drained and rinsed
  • 1 cup Water
  • 2 tbsp Vegan Beef Broth Base We use Orrington Farms
  • 1/4 tsp Liquid Smoke
  • 1/4 cup Nutritional Yeast
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tsp Black Pepper

For the Sandwich

  • 1/2 cup Vegan BBQ Sauce We use Tesssemae's Organic
  • Vegan Cole Slaw
  • Pickles
  • Buns

Instructions

  1. In a small high power blender combine all seitan ingredients except for the vital wheat gluten. Blend until smooth.

  2. Add the blended mixture to a large bowl. Add in the vital wheat gluten and mix by hand until all flour is blended in.

  3. Shape the dough into a log and wrap tightly with aluminum foil.

  4. Add two cups of water to the bottom of your Instant Pot. Insert wire roasting rack. Place the wrapped foil packet on the rack and seal the lid. Set your Instant Pot on manual to high pressure for 40 minutes.

  5. After the timer goes off allow the pressure to release then carefully remove the foil packet. Set it aside and allow it to cool. When the seitan has cooled enough to work with remove it from the foil packet. At this point we like to let the seitan sit overnight in the fridge. This step is not completely necessary but we have found that it gives the seitan a denser meatier texture.

  6. When ready to serve cut the seitan into chunks and grind it up in your food processor for a pulled BBQ ground texture. Then add the ground seitan to a skillet and mix in 1/2 cup of your favorite BBQ sauce. Heat and then serve on sandwich buns. Optional fixings to add to your sandwich include coleslaw and dill pickles.
