Instant Pot Black Eyed Peas

Do you believe in good luck? In the south we eat black eyed peas on New Year’s Day for good luck in the new year. The swelling of the beans as they cook symbolizes prosperity. They are traditionally served with collard greens which are symbolic for money. Unfortunately in the south they are also traditionally cooked ham for flavoring so I won’t order black eyed peas and greens when I eat out. That’s why I prefer to cook them myself at home in my Instant Pot.  Vegan Instant Pot Black Eyed Peas are so quick and easy to make you will want to eat them all year long! 

Instant Pot Black Eyed Peas

Total Time 20 minutes

Ingredients

  • 1 cup dried black eyed peas
  • 1/2 white onion finely diced
  • 3 cloves garlic minced
  • 2 1/2 cup vegetable broth or water
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • cilantro for garnish optional

Instructions

  1. Finely dice 1/2 of a white onion and 3 cloves of garlic. 

  2. Add all ingredients to your instant pot. Cook on high pressure for 15 minutes.
