Everything Bagel Vegetarian Breakfast Casserole

This Everything Bagel Vegetarian Breakfast Casserole is an easy breakfast or brunch recipe. All the prep work is done the night before so all you have to do in the morning is pop it in the oven. Super simple. Even though it’s just the two of us Eric and enjoy making a big weekend breakfast or brunch at home. I love casseroles. They are so easy to make and you can do other things while they bake. Plus did I mention the leftovers?!? Leftovers are the best. I love when I make a big weekend meal and I have leftovers for weekdays when I don’t have time to cook.

If you love everything bagels raise your hands! I’m a sucker for a good bagel anytime of day. I’m also semi obsessed with Everything Bagel Seasoning (like you buy at Trader Joe’s). It’s a blend of sesame seeds, salt, garlic, onion, and poppy seeds. It’s great sprinkled on avocado toast which is another solid vegetarian breakfast option. Everything Bagel Vegetarian Breakfast Casserole

Ingredients

  • 4 Everything Bagels
  • 8 Eggs
  • 1 tbsp Everything Bagel Seasoning
  • 2 cups Almond Milk
  • 4 Morningstar veggie sausage patties
  • 8 oz Cream cheese
  • Chives or Green Onions chopped optional for serving

Instructions

  1. Slice the bagels into bite size cubes and spread them out evenly in a 12×8 casserole baking dish.

  2. Defrost the Morningstar sausage in the microwave and then chop into small pieces. Scatter the sausage pieces with the bagel cubes.

  3. Cut the cream cheese into small pieces and evenly distribute on top of the bagels and veggie sausage.

  4. Whisk the eggs together with the milk. Then pour the mixture evenly over the bagels in the casserole dish. Finish by sprinkling a table spoon of Everything Bagel Seasoning over the casserole. Cover your dish and let the bagels soak in the liquid overnight in the fridge.

  5. When you wake up in the morning pre-heat your oven to 350. Bake the casserole uncovered for 45 minutes. When serving top with chives or green onions.
