Seitan Osso Buco
Seitan Osso Buco is a modern vegan version of a classic Italian dish. It is a braised dish with carrots, white wine, and broth. I love the carrots in this dish! Feel free to add more carrots than the recipe calls for. They are bright, fresh, and earthy all at the same time. The carrots are complimented by the wine and citrus in the broth. The seitan needs to cook in the broth for an hour. That hour of simmering time also allows the broth to develop complex layers of flavor. The broth is the best part! We like to serve it over grits or polenta. Grits are a Southerners…

Vegan Pizza Two Ways
Pizza is my favorite! Seriously I could eat it every day. When I spotted vegan pizza crusts at my local Publix (they stock them with the pita bread in the deli area) grocery store I had to try them. Brooklyn Bred pizza crusts are amazing! They are so yummy and easy to bake. Two crusts come in each package so we wanted to make Vegan Pizza Two Ways. The first pizza is Grilled Broccoli and Red Onion and the second is a Hawaiian style Pineapple Chutney pizza with sun dried tomatoes and black olives. Grilled Broccoli is so good y’all! We sprinkled the broccoli with nooch and other spices before…

Vegan Frito Pie
Did you know Frito corn chips are vegan? Read the back of the bag. Three simple ingredients: Corn, Corn Oil, and Salt. What’s the best way to eat these yummy salty corn chips? Vegan Frito Pie! Frito chips covered in delicious vegan cheese sauce and chili. Frito Pie is a classic southern dish. Some folks call it a walking taco because they dump the toppings straight into the bag of chips and eat it that way. I like to think I am little classier than that but I am not going to front I have totally done that before. Frito pie can be a great option on camping trips and…

Buffalo Chickpea Pinwheels
Buffalo Chickpea Pinwheels are super cute and super easy to make. You need a food processor to get the right texture. It’s a lot like hummus texture wise. Just blend the ingredients and spread on the tortillas. When you roll up and cut the tortillas they look like pinwheels. Buffalo Chickpea Pinwheels make a fun party snack for a group of people or lunch for two. I love fun party snacks! Finger food should be fun and easy to eat. We like to serve them with pickles. I think that flavor pares well with the buffalo sauce but they are great on their own or with a side of raw…

Smoked Cabbage
Smoked Cabbage is really easy to cook in a smoker. It really picks up the flavor and just falls apart. We like to smoke ours with jalapeño peppers for an extra little kick of flavor. We fired up the smoker this weekend because it finally stopped raining! So excited! I am sick of the winter rain. I love this mild unseasonably warm weather and had to find any excused to be outside so Sunday we grilled out and spent time cleaning up our yard. Smoked Cabbage is great in the winter it goes well with roasted root veggies. It is a great savory side dish. This is serious comfort food.…

Vegan Winter Coleslaw
I am trying my best (hello new year’s resolution) to eat more seasonally and to take advantage of fresh produce. Sometimes all I want to eat is raw crunchy veggies. That yummy crunch can be so satisfying and filling. Vegan winter coleslaw is a great side dish or a yummy base layer for a buddha bowl. You could totally add some seitan or tofu to it and call it a meal. If You Like Raw Veggies… Mardi Gras Buddha Bowl Vegan Stuffed Sweet Peppers Carrot Salad

Black Eyed Pea Salad
Are you excited for the new year? I know I am this past year has been tough. In the south we eat black eyed peas and greens to start the new year off right. To welcome the new year I wanted a modern twist on this tradition so I made a Black Eyed Pea Salad with fresh greens. This salad uses prepared back eyed peas. You could use canned but it is so easy cook your own black eyed peas in an instant pot if you have one. If you cook your own you won’t have to read labels to make sure your black eyed peas aren’t seasoned with meat.…

Vegan Stuffed Sweet Peppers
These vegan stuffed peppers are perfect for parties! The cute little mini sweet peppers are stuffed with herby cashew cheese to create a tasty vegan bite. I have seen these made stuffed with cream cheese and bacon and thought how easy it would be to veganize. I want vegan stuffed everything! So yummy! I love the color in these too. Use what ever colors you want but I like the mixed bags of peppers. The mini sweet peppers are not not that spicy. They are milder than bell peppers. If you want to make this with more heat try stuffing jalapeños or adding hot sauce to the cashew cheese. Vegan…

Instant Pot Black Eyed Peas
Do you believe in good luck? In the south we eat black eyed peas on New Year’s Day for good luck in the new year. The swelling of the beans as they cook symbolizes prosperity. They are traditionally served with collard greens which are symbolic for money. Unfortunately in the south they are also traditionally cooked ham for flavoring so I won’t order black eyed peas and greens when I eat out. That’s why I prefer to cook them myself at home in my Instant Pot. Vegan Instant Pot Black Eyed Peas are so quick and easy to make you will want to eat them all year long! If you…
