Easy Vegetarian Breakfast Casserole

Ingredients
- 1 cup tomato diced
- 2 cups broccoli finely chopped
- 2 cups shredded cheddar cheese
- 12 eggs
- 1/4 tsp salt

Preheat the oven to 350 and lightly grease a 9×13 casserole baking dish.

Chop the broccoli (about 2 crowns) in the food processor this should yield about 2 cups of finely chopped broccoli. Dice 2 or 3 small tomatoes to yield one cup of diced tomatoes.

In a large mixing bowl whisk together a dozen eggs with salt, pepper, onion powder, and red pepper flakes.

Then add the veggies and shredded cheese to the eggs and mix together.

If you want to add the Morningstar veggie breakfast sausage place the frozen patties on a plate and microwave for one minute to defrost. Then you can chop them or crumble them and mix into the eggs.
