    Vegan Carrot Salad

This recipe for Vegan Carrot Salad is simple and straightforward because I wanted to let the sweetness of the carrots shine through. There are only five ingredients and it is pretty quick to whip up. If you have a food processor with a shredder function it should take less than ten minutes to make this yummy raw vegan carrot salad. If you don’t have a food processor you can still make it by using a box grater to shred the carrots but it will take a little more time. Love Carrots? Smoky Chipotle Bagel Sandwich

To make a good sandwich you need a good base spread. One of my new favorite things is Oasis Naturals Almond Dip. I buy it at Sprouts and it comes in three yummy vegan flavors. The smoky chipotle is my favorite. It is spicy but not overpowering. I used that as the spread for this Chipotle Bagel Sandwich. Carrot or red pepper hummus would have also worked well on this sandwich. The almond dip is really good with carrots. Thats why I decided to make some carrot ribbons with a vegetable peeler. Then layered on top of the carrots apple slices and radish sprouts. More Sandwich Ideas? Southern Tomato Sandwich…

    Vegan Thai Meatball Wraps

Secret confession time this meal was a total accident. I saved a recipe on Pinterest for “Thai Chickpea salad” that I was going to make into a wrap but when it was time to make dinner I couldn’t find my Pin or the recipe. I looked everywhere…both my Pinterest accounts…and all of my secret boards. No Pin for thai chickpeas anywhere; no familiar looking images in a quick Google search. I had no idea what I was going to make for dinner. So I did what any sane person would do I bitched about it on Twitter and then I starting searching my kitchen cabinets for something I could cook…

Pumpkin Spice Latte Vegan Cheesecake Bars

That’s right you heard me, get excited, for PSL Vegan Cheesecake! It’s that time of year when the whole world goes insane for pumpkin spice, your truly included. I don’t know why. For me I think it’s about faking it until it really feels like fall outside. If I turn the AC on high, close my eyes, and inhale delicious pumpkin spice scent then I can pretend it is fall outside. But in truth it’s 90 something degrees outside and I’m beyond tired of sweating in this summer heat. We probably have another solid month of summer before it’s cool enough outside to break out my boots and leggings. So…
