Vegan Peach Upside Down Cake

My grandmother used to make an amazing pineapple upside down cake. Maybe thats why I love upside down cake. The name is fun too. There is just something very whimsical about the idea of an upside down cake. I love to use seasonal fruit so it was an easy choice to use peaches for this vegan upside down cake.

Alabama is all about Chilton County peaches

Georgia may be known as the peach state but here in Alabama we take our peaches pretty serious too. If you are ever driving down I-65 South to the beach look for the giant peach water tower in Clanton. Stop and buy some peaches. Trust me.

Vegan Upside Down Cake Cooked In Cast Iron

Cooking in cast iron keeps the cake moist. It gives this vegan upside down cake a beautiful crisp crust. If you have cast iron pans they should be used and not just hidden away somewhere. I love this vegan upside down cake because it is not too sweet. It is a dense cake that that pares well with a weekend brunch or maybe just coffee with friends.

Vegan Peach Upside Down Cake

This vegan upside down cake is dense and not overly sweet. It is a great addition to a weekend brunch or an afternoon tea.

Ingredients

Topping

  • 3 Peaches
  • 1 tbsp coconut oil
  • 1/4 cup brown sugar

Cake Batter

  • 2 cups flour
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup peach juice
  • 1/2 cup coconut milk canned
  • 1/4 cup coconut oil
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350.

  2. In a large mixing bowl stir together all the ingredients for the cake batter and set aside.

  3. Wash and peal your peaches. Cut the peaches into thin slices.

  4. Grease a large 12" iron skillet with a tablespoon of coconut oil. Then evenly sprinkle 1/4 cup of brown sugar in the greased pan. Add a layer of peach slices on top or the brown sugar. This can be done haphazardly or in a pretty circular pattern. 

  5. Pour the cake batter over the peaches and bake for 40 minutes. When the cake is done (check it with a tooth pick to see if it comes out clean in the middle of the cake) remove from the oven and allow to cool for at least 30 minutes before trying to remove from the pan.  Cast iron holds heat so please be carful. 

  6. Use a knife to loosen the edge of the cake from all sides of the iron skillet. Place a plate over the cake and carefully flip it over to remove from the skillet.
