Vegan Potato and Collard Greens Casserole
We had some left over collard greens we needed to eat up so we used them in this vegan casserole. Spinach or any other prepared greens would work just as well. I love casseroles for Sunday dinner because it means I will have something to take for lunch during the rest of the week. Chili Cheese Nachos
These would be great Super Bowl food! It is an easy dish to do with leftover chili. Seitan Melt
It’s been a while since we have shared a sandwich. Since we got a new cast iron grill pan last weekend couldn’t resist trying it out. We had some seitan we had made earlier. So we are back from the holidays. Sorry we didn’t post much in December the month just got too crazy. Wanted to cook something a little different last night and honestly just wanted to use up the cranberries we had leftover in the fridge. Really happy with the way this turned out. Beet Potato Salad
For this recipe you need: 3 large beets 2 1/2 cups diced potatoes 2 carrots chopped 1/2 can of small peas 1/2 of a small white onion finely diced 2 tbsp pickle relish 2 tbsp fresh chopped dill extra lite olive oil salt Roast or boil the beets, potatoes, and carrots until fully cooked. When the beets are cooked peal them and cut into bite size pieces. Mix with the raw onion, pickle relish, fresh dill, and canned peas. Drizzle with a little oil, just enough to coat everything and finish with salt. Serve chilled.

Who does not love the old sausage balls in the crock-pot with a sauce made from cocktail sauce and grape jelly? No one that is who! It is great to have a batch made for parties and dinners for people to snack on. Tofurky Monte Cristo Sandwich
So what do you do with all those leftovers….how about a sandwich? To make this we used: sliced sourdough bread 1/2 cup milk 1 egg 1/2 TBSP butter couple slices leftover Tofurky roast leftover cranberry sauce (we shared our recipe for this yesterday) lettuce thin slice of brie cheese for each sandwich Wisk the egg and milk together.
