Chili Cheese Nachos

These would be great Super Bowl food! It is an easy dish to do with leftover chili. All you need to do is put a little chili and grated cheese over some tortilla chips and broil in the oven until the cheese melts.  Not sure if we have shared our chili recipe so posting that here too. 

To make a large batch of chili you need:

  • 1 large white onion diced
  • 1 can 28 oz diced tomatoes 
  • 1 can 28 oz tomato sauce 
  • 1 can 16 oz navy beans
  • 1 can 16 oz red beans
  • 1/2 cup chili powder
  • 1 tbsp oregano
  • 1 tbsp paprika 
  • 1 tea sp garlic powder
  • 1/2 tea sp pepper
  • 1/2 tea sp tumric
  • 1 can 12 oz cheap beer
  • 2 cups frozen corn

Start by sauteing the onions in a large stock pot. When the onions are cooked add all of the spices and stir in for a few minutes. Then add the beer to deglaze the bottom of the pot. Add the diced tomatoes and sauce. Stir to mix together and bring to a low boil. Add the beans and corn. Reduce heat and simmer for about an hour.
