Pumpkin Spice fans get ready! Our Vegan Pumpkin Spice French Toast is flavor bomb! It’s an explosion of fall flavors. This amped up French Toast is made without any eggs or dairy. It is a simple easy to follow recipe perfect for any weekend breakfast.

French Toast is one of my favorite weekend treats! It’s a treat because we don’t make it all of the time. I’m not sure why because french toast is so easy to make. It’s not overly fussy but feels decadent. Our Vegan Pumpkin Spice French Toast has a rich flavor. It taste like toasted banana bread that has been drenched in the warm flavors of fall. Maple, vanilla, and cinnamon will dance and swirl on your taste buds.

What Makes It Vegan?

How do you make French Toast with out eggs or milk? Aren’t those normally the main ingredients in French Toast? For our Vegan Pumpkin Spice French Toast we use banana as the binder to replace the eggs that are normally used in French Toast. This gives the French Toast a warm banana bread flavor that is naturally sweet. The milk is replaced with a blend of almond milk and non-dairy pumpkin spice creamer. The pumpkin spice creamer adds needed liquid to the batter and just a touch of fall flavor. You can still make this without the almond creamer but I like the added flavor boost. If you can’t find pumpkin spice non-dairy creamer try looking for one with caramel or vanilla.

What Do You Need To Make Vegan French Toast?

To make the French Toast batter you need a Magic Bullet or some other type of small blender. We use our Magic Bullet blender way more than I thought we would we we first got it. It’s great for making quick sauces and salad dressings. This recipe uses the blender to puree the banana and mix it with other ingredients for a smooth lump free batter.

You also need pumpkin spice seasoning! For the pumpkin spice I used Simply Organic Pumpkin Spice. You can make your own spice blend but I love the convenience of a premade blend. If you want to make your own Love & Lemons has a good recipe. I put this organic pumpkin spice on everything! Its great in oatmeal, yogurt, or lightly sprinkled on peanut butter toast for an easy breakfast.

How To Make Vegan Pumpkin Spice French Toast

Making this dairy-free and eggless French toast is incredibly simple. Just follow these easy steps:

  1. Blend the batter: In your Magic Bullet or small blender, combine the banana, non-dairy pumpkin spice creamer, almond milk, vanilla extract, and pumpkin spice seasoning. Blend until completely smooth and lump-free.
  2. Prep the bowl: Pour your freshly blended pumpkin spice batter into a wide, shallow mixing bowl that is large enough to easily dip your bread slices.
  3. Heat the skillet: Place a large skillet over medium heat and add a pat of vegan butter or coconut oil. Allow the pan to fully heat and melt the butter, this ensures a beautiful golden crust and keeps the toast from sticking.
  4. Dip the bread: Working in batches of three slices at a time, quickly dip each piece of bread into the batter. Make sure both sides are evenly coated, but don’t let it soak too long!
  5. Cook until golden: Place the batter-coated bread slices into the hot skillet. Cook for about 2 minutes, then use a spatula to flip and cook for another 2 minutes on the other side until both sides are perfectly golden brown.
  6. Repeat and serve: Move the cooked French toast to a platter and repeat the process with your remaining bread. Serve warm with plenty of maple syrup and a light dusting of extra pumpkin spice!

Frequently Asked Questions About Vegan French Toast

Can I use a different fruit instead of a banana?

The banana acts as the “binder” to replace eggs, providing that thick, custardy texture. If you aren’t a fan of banana flavor, you can substitute it with 1/4 cup of pumpkin puree. Just note that the batter may be slightly thinner, so dip the bread quickly!

What is the best type of bread for vegan French toast?

For the best results, use a thick-cut, sturdy bread. A loaf of sourdough or a vegan-friendly Challah or Brioche works beautifully because they can soak up the batter without falling apart. If your bread is a day or two old (slightly stale), it’s even better!

I can’t find pumpkin spice creamer; what should I do?

No problem! You can use an equal amount of plain almond milk (or oat milk) and add an extra teaspoon of Simply Organic Pumpkin Spice and a splash of maple syrup to the blender. This will give you that same warm, spiced flavor profile.

Why is my French toast soggy?

Soggy French toast usually happens if the bread is soaked for too long. Since this vegan batter uses banana and almond milk, it is quite thick. A quick dip—about 5–10 seconds per side—is all you need. Also, ensure your skillet is preheated with vegan butter so the outside sears and crisps up immediately.

Can I make the batter in advance?

Yes! You can blend the batter in your Magic Bullet the night before and store it in an airtight jar in the fridge. Just give it a quick shake or stir before using it the next morning, as the spices may settle at the bottom.

    Ingredients

    • 1 Banana
    • 1/4 cup Non-Dairy Pumpkin Spice Creamer We used Silk brand
    • 1/2 cup Almond Milk Or other non-dairy milk
    • 1 tsp Vanilla Extract
    • 1 tsp Pumpkin Spice
    • 1 Loaf of Bread Cut into 12 slices about 1/2 inch thick
    • Vegan Butter or Coconut Oil
    • Maple Syrup Optional for serving

    Instructions

    1. In the Magic Bullet (or other small blender) combine the ingredients (banana, non-dairy creamer, almond milk, vanilla extract, and pumpkin spice seasoning) for the French Toast batter. Blend until smooth.

    2. Pour the batter into a mixing bowl.

    3. Add vegan butter or coconut oil to a large skillet on medium heat. Allow the pan to heat and melt the butter. This will keep your French Toast from sticking as much.

    4. Work in batches using three slices of bread at a time. Dip each piece of bread into the batter. Make sure the batter coats the bread on both sides.

    5. Place your three batter soaked bread slices into the large skillet. Cook each piece of toast for about 2 minutes.

    6. Then use a spatula and flip the toast and cook for another 2 minutes on the other side so that both sides of the French Toast are golden brown.

    7. Move the cooked toast to a plate and repeat this process with the remaining batches of bread.

    8. Serve with maple syrup and a light dusting of pumpkin spice.
