Granola is a staple in our house. My husband, Eric, likes to put in on his yogurt and I just like to eat it by the handful! This vegan Pumpkin Spice Granola is the best granola I have made yet! It has a subtly sweet flavor with warm flavor notes that nod to fall. Get ready for all the fall feels with this vegan Pumpkin Spice Granola!

Hooray for Pumpkin Spice Season!

I think I can feel the nip of fall and the rustle of leaves in the autumn breeze. No. Wait that’s just my air conditioning blowing papers on my desk. It’s August in the South. It’s still blazing hot outside but Pumpkin Spice Season is creeping its way in. Thanks Starbucks.

Pumpkin Spice is one of my favorite flavors. It’s a seasonal treat that you look forward to all year. It’s special because because it’s the first sign of fall. The warm flavors of vanilla, maple, brown sugar and cinnamon are all perfectly captured in this pumpkin spice granola. I like making this granola early in the season because it’s not overpowering. Granola is just a simple treat. It’s not too in your face. It’s not like I’m decorating for Halloween in August. Know no one is going to know. Who will know? I won’t tell.

For the pumpkin spice seasoning in this granola I used Simply Organic Pumpkin Spice. Since pumpkin spice is just a blend of other spices you can make your own but I love the convenience of a premade blend. I shake that spice jar over almost everything this time of year! How do I make granola at home?

Making granola at home is way easy! It’s cheaper than store bought granola. So it will save you money plus give you bragging rights. How many of your friends can brag that they make their own granola? Some of the granola in stores is $10 or more for a small bag. That’s crazy. The main ingredient in granola is old fashioned oats. You can buy a tube of oats for under $3 and just make your own batches of granola with different flavors whenever you want.

To make granola at home you need a baking tray, some parchment paper, and a few basic ingredients. The main ingredient is old fashioned oats. Make sure you buy old fashioned oats and not quick oats. Quick oats are oats that have been cut to cook faster. For this recipe you want the thicker old fashioned oats.

Mixing together these ingredients is fast and easy. It only takes about ten minutes. Once everything is mixed up you spread your granola out into a thin even layer on your parchment paper lined tray. You want the oats to be spread out as evenly as possible so they have a chance to brown and crisp. The granola bakes for 20 minutes total but you will need to gently stir and carefully flip it halfway through. This step is important. You don’t want your granola to burn but you want it to evenly bake on both sides.

Be carful when you take your granola out of the oven. It will be way too hot to handle. Make sure you give it time to fully cool down before you touch it. The granola will crisp up more as it cools. When it’s completely cool transfer the granola to an air tight container. I like to use a pretty mason jar. It will stay fresh in your container for a couple of weeks.

Pumpkin Spice Granola

Ingredients

  • 2 cups Old Fashioned Oats
  • 1/4 cup Pepita Seeds
  • 1/4 cup Hemp Seeds
  • 1/4 cup Pecans Chopped
  • 1/4 cup Brown Sugar
  • 1 tbsp Pumpkin Spice Seasoning
  • 1 tsp Cinnamon
  • 1 tsp Vanilla Extract
  • 1/4 cup Liquid Coconut Oil
  • 1/4 cup Maple Syrup

Instructions

  1. Pre heat your oven to 300.

  2. Line a baking tray with parchment paper.

  3. In a large mixing bowl combine all of your dry ingredients (the first 7 ingredients).

  4. Then mix in the vanilla, coconut oil, and maple syrup. Stir well so the oats are evenly coated.

  5. Spread the oat mixture evenly out on your baking tray.

  6. Bake the oats for 10 minutes then use a spatula to carefully flip and stir the granola. Bake for an additional 10 minutes. The total baking time is 20 minutes.

  7. Remove the granola from the oven and allow to cool on tray. The granola will crisp more as it cools.

  8. When completely cool transfer to an airtight container to keep your granola fresh for a couple of weeks.
