
Pre heat your oven to 300.
Line a baking tray with parchment paper.
In a large mixing bowl combine all of your dry ingredients (the first 7 ingredients).
Then mix in the vanilla, coconut oil, and maple syrup. Stir well so the oats are evenly coated.
Spread the oat mixture evenly out on your baking tray.
Bake the oats for 10 minutes then use a spatula to carefully flip and stir the granola. Bake for an additional 10 minutes. The total baking time is 20 minutes.
Remove the granola from the oven and allow to cool on tray. The granola will crisp more as it cools.
When completely cool transfer to an airtight container to keep your granola fresh for a couple of weeks.
