    Goodbye July, Hello August! Summer I am so done with you. Once I get past 4th of July I am officially done with Summer and specifically the Summer heat. We went on a super fun road trip to Asheville, NC. Asheville is a vegan and beer heaven in the South. There are so many great food options and breweries. We did a couple of touristy things like drive on the Blue Ridge Parkway and visit the Biltmore estate to see the Chihuly glass exhibit. But basically all we did on the trip was eat and drink.     Have you ever had the pineapple salsa from Whole Foods? It’s so good I love it! Some times its is too acidic for me to eat much of though.     These dairy free peaches and cream frozen treats are to die for. I love eating out of tiny little mason jars. I used small eight ounce jars. I call them half jars. They would be super cute at a backyard party or a picnic in the park. Best part is you can make them ahead of time and then just grab them out of the freezer and serve.
