Vegan Apple Bourbon Cobbler

When the crisp autumn air rolls in and apple season is at its peak, there’s nothing better than a warm, comforting dessert fresh out of the oven. This vegan apple bourbon cobbler is the perfect way to celebrate fall flavors! It’s packed with tender baked apples, soaked with bourbon, and topped with a sweet golden biscuit-like crust. The best part? It’s completely dairy-free and egg-free, so everyone can enjoy a generous scoop (especially with dairy free vanilla ice cream melting on top).

Sweet, Tart Apples + Warm, Caramel Bourbon

I love drinking (and cooking with) bourbon in the fall. It’s the perfect cozy warming spirit for cooler nights. Bourbon has caramel, vanilla, and toasty oak notes that play beautifully with the natural sweetness of apples. It’s a match made in heaven.

We live in Tennessee just a couple hours drive from Kentucky so occasionally we like to take a long weekend trip to visit the Kentucky Bourbon Trail. It’s the perfect road trip for bourbon lovers. We love stopping at iconic distilleries to tour historic facilities and seeing how bourbon is made from grain to barrel. Plus there is usually a tastings at the end of the tour. I don’t have a favorite bourbon (it’s too hard to choose!) but I love going on the different tours. The tour experience at Jim Beam is one of my favorites!

Does it matter what bourbon you use in this recipe? I wouldn’t waste my best most expensive bourbon on it but do use a bourbon that you enjoy drinking. If you wouldn’t drink it why would you cook with it? The bourbon’s alcohol content does cook off in the baking process leaving behind the rich caramel and spice notes we love from bourbon.

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×9-inch baking dish or use a cast iron skillet like I did.
  2. Prepare the apple filling: In a large bowl, toss apple slices with bourbon, brown sugar, maple syrup, cinnamon, nutmeg, cornstarch, and vanilla. Spread evenly in the baking dish.
  3. Make the cobbler topping: In another bowl, whisk together the melted vegan butter, sugar, vanilla, and plant based milk. Then add the flour, baking powder and salt. Mix to combine. The batter will be thick.
  4. Assemble: Drop spoonfuls of the cobbler dough over the apples. It won’t cover them completely this allows the filling to bubble through.
  5. Bake: Place in the oven for 35–45 minutes, until the topping is golden brown and the apples are bubbling.
  6. Cool slightly and serve: Let the cobbler rest for 10 minutes before serving warm. Add a scoop of vegan vanilla ice cream or a drizzle of coconut whipped cream for extra indulgence.
