Goodbye June, Hello July! June was pretty low key for us. We didn’t do anything too exciting. We actually spent a lot of time at home this month. I have been testing a lot of different recipe ideas for Vegetarian South. The post I am most proud of in June though is a recipe Eric developed. Vegan Seitan Kebabs With Turmeric Sauce
If you love to grill as much as we do you need to try these seitan kebabs pronto. They are so good! We have have made them twice this week to test and get just right and I could totally eat them again tomorrow. For the skewers we alternated pieces of seitan and cherry tomatoes. The tomatoes are a perfect combination with this. When lightly grilled they are so juicy and will burst open with flavor. We like to serve this over basmati rice or on pita bread to make a wrap. My grandmother used to make an amazing pineapple upside down cake. Maybe thats why I love upside down cake. The name is fun too. There is just something very whimsical about the idea of an upside down cake. I love to use seasonal fruit so it was an easy choice to use peaches for this vegan upside down cake. Alabama is all about Chilton County peaches Georgia may be known as the peach state but here in Alabama we take our peaches pretty serious too. Simple Summer Corn Frittata
Eric brought home some fresh eggs this weekend that one of his coworkers had given him. I would never want to raise chickens but I am grateful that we know people who do. When we have extra eggs we make a frittata. I love a frittata! They are so easy to make. It can be the star of an almost effortless meal. Breakfast, Brunch, Lunch, Dinner? I don’t care. Vegan Buffalo Potato Salad
Potato Salad is must for summer BBQs and picnics. It is a classic side dish for any cookout. Anyone can make vegan potato salad but to add an unexpected twist why not make Buffalo Potato Salad. I love this recipe because it adds and extra layer of flavor with out going too crazy spicy. But hey if you love buffalo sauce feel free to add more. Don’t let me stop you from making your Buffalo Potato Salad as hot as a Southern summer.

Goodbye May, Hello June! Summer is in full swing here! We have been grilling like crazy and our garden is in bloom. Our basil plants are big and bushy and I think we will be able to pick our first tomato next week. I got a new watering can! I know super exciting stuff! I named him Greeny. Steak night, Date night! When we want to have a nice meal without a lot of fuss we make vegan beet steaks. We call it steak night because this is as close as we are getting to a steak house dinner. Tomato Salad is a summer classic. It pares so well with basically everything. I know thats a cop out but it’s true! It’s great on its own but also goes with pasta, bread, lettuce, Israeli couscous. There are so many different ways to serve Tomato Salad. To make Tomato Salad you need: 2 cups of cherry tomatoes 1 tbsp fresh oregano 1/4 cup of fresh chopped basil 2 ears of corn 1 tbsp olive oil 1 tbsp balsamic vinegar Salt and Pepper Start by grilling two ears of corn. Strawberry Kombucha Cocktail
I love using fresh fruit in cocktails. It adds so much flavor with out having to use sugary mixers. Kombucha is also a great mixer to use in drinks. It is tart and fruity and there are so many different flavors to play with. For this cocktail I used Muse and Metta nettle, lemon, ginger kombucha.
