    New cutting board!

    We were out at the Valleydale Farmers Market this morning and I saw these beautiful cutting boards and knew I had to have one. They are made by a local craftsman Craig Skowronek.     Southern Style Tacos

    We had some leftover pinto beans we wanted to use up from dinner last night and we had some okra we bought at the farmers market so decided to combine the two and make tacos. Today made some quick chow chow relish to top it. For the Southern Style Tacos: Cooked pinto beans Chow Chow (see recipe below) Okra  2 eggs 1 cup butter milk 1 cup flour 1 cup corn meal oil for frying Taco shells To fry the okra first mix two eggs with a cup of butter milk.     Texas Caviar

    Texas Caviar is a veggie dip that is great with tortilla chips or on a burrito. We used yellow pear tomatoes and field peas from the farmers market and cherry tomatoes from our garden. To make a large batch of Texas Caviar you need: 3 cups field peas 2 ears corn 1 jalapeno pepper deseeded 2 cups pear tomatoes 1 cup cherry tomatoes 2 limes 2 avocados diced 1/2 cup diced red onion 1/8 cup cilantro 1 tbsp olive oil oregano chili pepper Start by cooking the field peas in salted water.     Blackberry Mint Cocktail

    The mint in the backyard is growing wild. It smells great every time I mow the lawn. To make one Blackberry Mint Cocktail you need: handful fresh mint 6 blackberries 1 1/2 oz rum simple syrup Start by muddling the mint in your glass then add the blackberries and crush them up a bit.     Jerk Seitan Chick’n with Rice and Peas

    Been rainy for past few days but went to the farmers market anyways Saturday. Bought some Boozer Farms peaches and thought it would be a great addition to this Caribbean flavored meal. To make the rice and peas you need to start by soaking your beans overnight.     Fried Green Tomato Sandwich

    Last summer we shared our recipe for fried green tomatoes. This time we tried the same recipe with soy milk instead of butter milk and it worked just as well. For this sandwich we mixed 1/8 cup of mayonnaise and one tea spoon of siracha and spread that on the bread. Then we just added our fried green tomatoes and little lettuce.     Caprese Sandwich on the Grill

    This a great lazy summer weekend sandwich. It is simple but has a lot of flavor. I love fresh tomatoes in the summer. To make two sandwiches you need: ciabatta bread mozzarella cheese  2 tomatoes 1 clove garlic 1 tbsp fresh chopped basil 2 tbsp balsamic vinegar 1 tbsp olive oil optional infused basil oil (muddle together a little basil and olive oil) Tooth picks Start by slicing and marinating the tomatoes.     Tomato Basil Frittata

    Last night we made a tomato basil frittata because we wanted to use some of the fresh basil from our garden. Our basil plants are starting to get pretty bushy. For the Frittata you need: 1/4 cup diced shallots 1 tomato sliced thinly 2 tbsp fresh chopped basil 1 tbsp butter 6 eggs 1 tea sp salt 1/4 tea sp black pepper Pre-heat your oven to 400 degrees. Use a large cast iron skillet and saute the shallots in the butter. Crack open six eggs and beat them together with the salt and pepper. Add the basil to the eggs.
