    Goodbye October Hello November

    Goodbye October! Saying goodbye to October makes me sad. It’s one of my favorite months full of fun fall activities and I can not believe it is November already.     Camping at Monte Sano State Park

    We went camping this past weekend at Monte Sano State Park. Monte Sano is a Alabama State Park on 2,140 acres atop Monte Sano Mountain (1,600 ft elevation) on the east side of Huntsville. This was our first visit to the park and we will totally be going back to Monte Sano because the campground was nice and there are so many trails to check out. There are over 20 miles of trails in the park varying from easy to extremely difficult.     Red Mountain Park in Birmingham

    Fall is great time of year to go hiking and enjoy being outside. Red Mountain Park is an 1500 acre urban green space in Birmingham with 15 miles of trails, incredible tree houses with views of the city, a 6 acre dog park, a climbing tower, zip line adventures, and more!     Vegan Cuban Sandwich

    If you love a huge sandwich this is for you! This is about as close as you can get to the taste of a real Cuban sandwich without the real meat. I love Cuban food so I had to make a vegan cuban sandwich. We served this sandwich with plantains and mojitos. It makes 2 to 4 sandwiches depending on how hungry you are.     Goodbye September Hello October

    Goodbye September! What a busy busy month! Time to make way for one of my favorite months of the year.  I love October so I always try to cram way too many activities in. We are planning a camping trip for later in the month. Have you been to Monte Santo State Park near Huntsville?     Vegan Chicken Salad

    Chicken Salad is taken pretty seriously in the south. It’s great for family gatherings and parties. I’m not sure if I have been to Wedding/Baby Shower where chicken salad wasn’t served.     Good morning y’all! September is a busy month in the Crutchfield house. We got back from vacay last weekend and it has been a busy week at work for both of us catching up on what missed while we were out.
