Green beans are a simple side dish. I serve them with many different meals. Green beans go well with a plate of BBQ or as a side to a casserole. I often serve them as a side with mac and cheese. In the south we serve green beans at Sunday dinners and with holiday meals. They are perfect for pot lucks and all sorts of family gatherings. Meatless southern green beans are hearty and satisfying comfort food. In our slow cooker recipe we cook green beans and potatoes together as a time saver for putting dinner together. There is no need to cook them separately. Beans and potatoes work really well together. The potatoes will soak up all the flavors in the cooking broth. The flavors are very complementary.
Why You Will Love This Recipe
If you grew up in the South, you know that green beans aren’t just a vegetable. They’re a big deal! This meatless version captures everything that makes the classic dish a staple while keeping it entirely plant-based. Here is why this recipe will become a permanent fixture in your rotation:
- True “Melt-in-Your-Mouth” Texture: We ditch the crunch in favor of the traditional, slow-simmered softness that defines authentic Southern cooking.
- Set It and Forget It: Using a slow cooker means you spend 10 minutes on prep and let the machine do the heavy lifting for 5 hours. It’s the ultimate “dump and go” side dish for busy Sundays.
- Smoky Without the Pork: By using a combination of Mushroom Umami Seasoning and Smoked Paprika, you get that deep, savory flavor without needing bacon or fatback.
- A Complete One-Pot Side: Cooking the red potatoes directly with the beans saves you a burner on the stove and ensures the potatoes soak up every drop of the seasoned vegetable broth.
- Perfect for Crowds: Whether you are hosting a holiday or looking for Vegetarian Southern Potluck Dishes, this recipe scales easily and stays warm in the crockpot for hours.

How Do You Make Meatless Southern Green Beans?
Making meatless southern green beans in the slow cooker is easy. You basically just dump everything in the slow cooker and then forget about it for a few hours. The beans will need to cook on high for 4 or 5 hours.
Southern green beans normally cook with bacon or pork fatback. Historically this was common practice in the south because it was an inexpensive way to add flavor to a dish by using what you already had. My grandmother always added a chunk of fatback to her pot of beans. It was so gross because it was exactly what it sounds like just a big chunk of pork fat. Don’t order green beans in a Southern style restaurant. It’s not worth the gamble because chances are good that the restaurant cooks their beans with meat. That’s why I like to play it safe and make my own southern style green beans at home.
The meat that others use gives Southern green beans a smoky flavor. To replicate that smoky rich umami flavor in this meatless version I have added mushroom umami seasoning and smoked paprika. The umami seasoning will give you a similar depth of flavor. Optionally you can also toss the green beans in vegan butter before serving to add more flavor and a rich mouth feel. The real secret to meatless southern green beans is the cooking time. The green beans cook for five hours or more in the slow cooker. That slow cooking process allows the beans and potatoes to tenderize and soak up the flavors you build in your broth.

Frequently Asked Questions: Southern Green Beans
Can I use canned or frozen green beans instead of fresh?
While fresh green beans provide the best texture for long slow-cooking, you can use frozen whole green beans in a pinch. If using canned beans, reduce the cooking time significantly (to about 1–2 hours) as they are already soft and may become mushy if cooked for the full 5 hours.
How do I get that “smoky” flavor without using bacon or fatback?
The secret to replacing meat in Southern veggies is building layers of umami flavor. This recipe uses Mushroom Umami Seasoning and Smoked Paprika to mimic that traditional campfire smokiness. For an extra boost, a drop of liquid smoke or a small amount of soy sauce can also add depth.
Why do the green beans need to cook for so long?
Unlike Northern-style green beans which are served “blanched” or crunchy, Southern green beans are meant to be deeply tender. The 5-hour slow-cooking process allows the vegetable fibers to break down and fully absorb the savory broth and spices.
What are the best potatoes to use for this recipe?
Red potatoes are ideal because they hold their shape well during long cooking cycles. If you use Russet potatoes, they may break down and make the broth cloudy (though they will still taste great!).
Can I make this recipe in an Instant Pot instead?
Yes! If you are short on time, you can cook these on High Pressure for about 20–25 minutes with a natural release. However, the slow cooker method is preferred for the best flavor infusion.
