Southern Tomato Sandwich
The tomato sandwich is a southern classic. It is simple, so easy to make, and so so good. The classic version that I grew up with is just basic white bread, mayo, and tomato but this version of a southern tomato sandwich is a little more modern.
Elevate your southern tomato sandwich by using quality ingredients. You want to choose a soft bread with medium slices. The bread shouldn’t be too thick because you want the tomatoes to be the star of this sandwich. The quality of the tomatoes you use matters. Nothing beats a fresh ripe tomato from your garden or local farmers market during tomato season. The tomato slices should be thin. Don’t forget to add salt and pepper to your tomato slices. I also love adding fresh basil and micro greens! The one thing I wouldn’t change from the classic version is the mayonnaise. I use plant based mayonnaise of course but you need to use a lot of it. Vegan mayonnaise should be generously applied!

Southern Tomato Sandwich
Ingredients
- 2 slices bread
- 3 or 4 thin tomato slices
- 2 tbsp vegan mayonnaise (we use Just Mayo)
- 4 basil leaves
- 1/2 cup micro greens, lettuce, or other sprouts
- 1 dash salt
- 1 dash pepper
Instructions

Liberally slather two slices of bread with mayonnaise. The generous portions of mayo are key to this sandwich.

Add the thinly sliced tomato. Salt and pepper the tomato.

Top with a layer of fresh basil leaves and micro greens. This adds a modern twist to a southern classic.
