
Add one tablespoon of olive oil to the bottom of your slow cooker.
Dice the onion and potatoes. Add to the chopped veggies to the bottom of your slow cooker.
Wash and trim your green beans. Then add the green beans to the slow cooker.
Add the spices (garlic powder, Italian seasoning, umani, and paprika). Add salt and pepper to taste. Optionally you can add red pepper flakes as well for a little kick.
Pour four cups of vegtable broth over the vegetables. Stir until well combined. It's okay if the broth doesn't cover the veggies completely.
Cover your slow cooker and cook on high for 5 hours or longer if desired. Stir the beans occasionally.
When ready to serve drain from remaining liquid. If desired toss in vegan butter and serve.
