Vegan Pesto Flatbread with Radish Salad
I love pizza so much that sometimes I have to trick Eric into eating it by calling it flatbread. This vegan pesto flatbread was so good. Really happy with the way it turned out. Eating salad on your pizza, I mean flatbread, was is also a great idea. Who doesn’t love that? We had some left over pizza dough from some breadsticks we made the other day and didn’t want it to go to waste. I also really wanted to try out this vegan organic basil pesto sauce that I bought at Sprouts because it looks so creamy. To make this pesto flatbread you need: Pre-made pizza dough Pesto sauce…

Vegan Marshmallow Treats
On a recent trip to Trader Joe’s I picked up a few bags of their vegan marshmallows because we have a camping planned soon and I want to roast them over the campfire but I also decided to make treats with them. Everyone remembers growing up and eating Rice Crispy Treats right? Well these are just like that but better because they are vegan. I started browsing a Peta list of accidentally vegan cereals and saw that Cap’n Crunch was on the list. So that was and easy choice. I knew I wanted to make ooey gooey sticky vegan marshmallow treats with Crunch Berries. To make Vegan Marshmallow Treats you need:…

Vegan Cuban Sandwich
If you love a huge sandwich this is for you! This is about as close as you can get to the taste of a real Cuban sandwich without the real meat. I love Cuban food so I had to make a vegan cuban sandwich. We served this sandwich with plantains and mojitos. It makes 2 to 4 sandwiches depending on how hungry you are. We make it into two sandwiches but we can never finish them. They are way too big. It is really easy to make if you have pre-made your seitan. To make the Vegan Cuban Sandwich you need: Basic Seitan – to changed the flavor profile…

Vegan Chicken Salad
Chicken Salad is taken pretty seriously in the south. It’s great for family gatherings and parties. I’m not sure if I have been to Wedding/Baby Shower where chicken salad wasn’t served. Unfortunately some people in the south also think vegetarians still eat chicken. No we don’t eat chicken (or fish I get that one all the time too). So here is my recipe for Vegan Chicken Salad. Everyones recipe is little different. It normally includes celery but I am not fan of the texture so I leave it out. I really like grapes and nuts in mine but it is also good with dried fruit. I was very pleased with…

What’s for Brunch September
Good morning y’all! September is a busy month in the Crutchfield house. We got back from vacay last weekend and it has been a busy week at work for both of us catching up on what missed while we were out. It’s nice to have a little down time so this weekend we have been chilling at home. Perfect opportunity for a relaxing sunday morning fall brunch. The only thing planned for the rest of our sunday is watching football! I’m not totally committed to fall yet because it’s still pretty hot here in Alabama (highs in upper 80s) so I’m not ready to go full on apple cider or…

Vegan Whipped Pumpkin Pecan Dip
When I found the tub of SoDelicious Dairy Free Coco Whip at Publix I knew exactly what I wanted to make…vegan pumpkin dip! I wanted to make a sweet healthy-ish snack but all of the pumpkin dips I found on Pinterest seemed pretty high in calories even the ones claiming to be healthy. Most of them were made with cream cheese and loads of added sugar. They just felt to heavy for light snack. The vegan coco whip is pretty amazing by itself but I spiced it up a bit with some fall flavor. What are your favorite fall treats? If you are craving a PSL this will do the trick!…

Vegan Nashville Hot Chicken Sliders
Hot Chicken is a Nashville specialty. Honestly is seems like the whole south has co-opted it as their own. Even Birmingham has a Hot Chicken restaurant. Basically it is a twist on classic southern fried chicken coated with super hot cayenne pepper sauce. Did I mention it’s really hot? So to veganize we made Chick’n Fried Seitan and slathered it with sauce. The end result is these amazing vegan hot chicken sliders. We started by making a batch of of our Basic Chick’n Seitan. This can be done ahead of time. We sliced the cooked seitan into small cutlet pieces. Some of the thicker pieces we even sliced in half…

Spicy Siracha Granola
I love making granola because its easy and its a portable snack. I will eat it for breakfast with fruit and yogurt but if I am short on time I will just take some with me and eat it plain. It is one of my go to foods to throw in my backpack to take with me on early morning hike. Today I decide I wanted to make some granola that was a little different so I came up with this spicy granola. Who doesn’t love Siracha? To make the Spicy Granola you need: 2 cups oats 1/3 cup honey 1/3 cup peanut butter 1 tbsp or more to taste…

What’s for Brunch
I decided I wanted to start hosting semi regular sunday brunches because I love brunch I am not a huge fan of going out for brunch. It’s always too crowded, with long waits and limited veggie options. When I told Eric he freaked out a bit until I told him not to worry because I was only inviting him and the cat. I knew he was only panicking at the thought of how much work going into cleaning and cooking to hosting guest. Saturday morning we went to Pepper Place farmers market downtown Birmingham. We bought a loaf of good french bread. Then we bought a watermelon radish and some…
