    Chili Cheese Nachos

    These would be great Super Bowl food! It is an easy dish to do with leftover chili.     It’s soup weather so here you go…… This makes a large batch. We have been eating it all week. Guess I need to freeze the rest for later.     It’s been a while since we have shared a sandwich. Since we got a new cast iron grill pan last weekend couldn’t resist trying it out. We had some seitan we had made earlier. Often will make a batch of it for the week and just use throughout on sandwiches or cut up in a burrito or something. This is the recipe we used this time.     Cranberry Orzo

    So we are back from the holidays. Sorry we didn’t post much in December the month just got too crazy. Wanted to cook something a little different last night and honestly just wanted to use up the cranberries we had leftover in the fridge. Really happy with the way this turned out. Might use slightly less cranberries next time because they are such a strong note in this dish but I still really enjoyed it this way.     Beet Potato Salad

    For this recipe you need: 3 large beets 2 1/2 cups diced potatoes 2 carrots chopped 1/2 can of small peas 1/2 of a small white onion finely diced 2 tbsp pickle relish 2 tbsp fresh chopped dill extra lite olive oil salt Roast or boil the beets, potatoes, and carrots until fully cooked.  When the beets are cooked peal them and cut into bite size pieces. Mix with the raw onion, pickle relish, fresh dill, and canned peas. Drizzle with a little oil, just enough to coat everything and finish with salt. Serve chilled.

    This is a meal that can easily serve a large group of people. Very easy to make. Its great for parties or tailgating.     Who does not love the old sausage balls in the crock-pot with a sauce made from cocktail sauce and grape jelly? No one that is who! It is great to have a batch made for parties and dinners for people to snack on. Ingredients for the sauce 1 cup grape jelly  1 and 1/2 cup ketchup  1 tbl spoon vegan Worcestershire sauce juice from one lemon  2 table spoons of horseradish  Mix the ketchup, Worcestershire, lemon, and horseradish in a small bowl and add to the crock-pot with the grape jelly.     Tofurky Monte Cristo Sandwich

    So what do you do with all those leftovers….how about a sandwich? To make this we used: sliced sourdough bread 1/2 cup milk 1 egg 1/2 TBSP butter couple slices leftover Tofurky roast leftover cranberry sauce (we shared our recipe for this yesterday) lettuce  thin slice of brie cheese for each sandwich  Wisk the egg and milk together.     Cranberry Sauce

    Starting to think about holiday food and wanted to share our recipe for cranberry sauce. I like our version because it calls for less sugar than many traditional recipes. For this Cranberry Sauce recipe you need: 12 oz bag of fresh cranberries 12 oz gingerale 1 cup orange juice 1/2 cup sugar 1 tea spoon cinnamon 1/2 tea spoon allspice 1 tea spoon ground ginger Combine all ingredients in a medium size pot and bring to a boil. Then reduce heat and simmer for 30 to 45 minutes. The sauce will still be runny but will thicken if you chill it overnight.

    Seitan au Vin

    This recipe is based on Julia Child’s Coq au Vin. The seitan replaces the chicken and rather than using fake bacon or smoked tempeh we tried to mimic some of those flavors with ingredients like smoked paprika.
