What Is South Carolina–Style Mustard BBQ?

Mustard BBQ sauce, commonly known as “Carolina Gold,” is a signature sauce of South Carolina, known for its distinct tangy, sweet, and slightly spicy flavor profile. Its primary ingredient is yellow mustard. The addition of mustard in barbeque sauce is historically linked to German immigrants in the region. Unlike tomato based sauces, South Carolina mustard BBQ sauce is known for its yellow color and tangy bite. it pairs perfectly with savory, smoky flavors. That’s exactly why it works so well with this shreaded tofu.

This sauce strikes the perfect balance between:

  • Tangy (yellow mustard + apple cider vinegar)
  • Sweet (maple syrup + brown sugar)
  • Slightly Spicy (just a touch of hot sauce!)

How to Make Shredded BBQ Tofu

Instead of cubing tofu, this recipe uses extra-firm tofu shredded by hand with a cheese box grater or grate the tofu with a food processor, creating shredded tofu that soak up sauce and crisp beautifully.

Basic method:

  1. Shred the extra-firm tofu.
  2. Season with spices and bake for 30 minutes until browned and slightly chewy.
  3. Toss with homemade South Carolina mustard BBQ sauce.

The result is a texture that’s surprisingly close to pulled barbecue. It’s a savory, saucy, and satisfying bite.

Top Tips for Perfect Shredded BBQ Tofu

  • Use Extra-Firm Tofu: This is essential for achieving a “pulled” texture that holds up during the shredding and baking process without becoming mushy.
  • Freeze for Better Texture: For an even meatier chew, freeze your tofu block in its packaging overnight, thaw it completely, and then press out the water before shredding. Freezing tofu changes its texture, making it chewier, firmer, and much better at absorbing marinades and sauces.
  • Watch the Grater: Use the largest holes on your box grater to ensure long, thick shreds that mimic traditional pulled pork.
  • Box Grater or Food Processor? Both will get the job done! A box grater will give you longer thicker shreds. I used a shredder attachment on my food processor for the tofu shreds in these photos.
  • Crispy Edges: For extra “bark,” spread the tofu in a single, thin layer on your baking sheet and avoid overcrowding the pan.

Serving Ideas for Vegan Shredded BBQ Tofu

My favorite way to enjoy this dish is by building a mashed potato BBQ bowl:

  • Creamy mashed potatoes
  • A generous scoop of BBQ tofu
  • Serve with Southern coleslaw or collard greens
  • Topped by pickles and chow chow (pickles are a must with BBQ!)
  • Optional toppings: cilantro, green onions, or pickled red onions

But don’t stop there! This tofu is just as good:

  • On a toasted bun with slaw for a vegan BBQ sandwich
  • Stuffed into wraps or tacos
  • In a bowl with roasted veggies over rice or grits

Frequently Asked Questions

What does South Carolina mustard BBQ sauce taste like?

Unlike the sweet, tomato-based sauces found in Memphis or Kansas City, South Carolina “Gold” sauce is tangy, zesty, and savory. It relies on yellow mustard and apple cider vinegar for a sharp bite, balanced out with brown sugar and a hint of heat. It’s the perfect match for the neutral, earthy flavor of tofu.

Do I really need to freeze the tofu first?

You don’t have to, but it is highly recommended! Freezing changes the molecular structure of the water inside the tofu, creating small “pockets.” When thawed and pressed, those pockets act like a sponge, allowing the mustard BBQ sauce to soak deep into the shreds rather than just sitting on the surface.

Can I make this in an Air Fryer?

Yes! If you want extra crispy “burnt ends,” air fry the seasoned shredded tofu at 375°F for 12–15 minutes, tossing halfway through. Once crispy, toss it in the mustard sauce and air fry for another 2 minutes to caramelize the sugars.

Is South Carolina BBQ sauce usually vegan?

Traditionally, many BBQ sauces contain honey or Worcestershire sauce (which has anchovies). This recipe is 100% vegan because we use maple syrup for sweetness and a vegan-friendly Worcestershire sauce to keep that deep umami flavor.

How long does shredded BBQ tofu last in the fridge?

This is a meal-prep dream! It stays fresh in an airtight container for up to 5 days. In fact, many people think it tastes better on day two once the tofu has had even more time to marinate in the tangy sauce.
