Vegan Shredded BBQ Tofu with South Carolina Style Mustard Sauce

Ingredients

For Shredded BBQ Tofu

  • 1 350g block Extra Firm Tofu
  • 1 tbsp Olive Oil
  • 1 tbsp Soy Sauce
  • 1 tsp Chipotle Chili Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Ground Cumin

For South Carolina Style Mustard Sauce

  • 1/2 cup Prepared Yellow Mustard
  • 1/4 cup Brown Sugar
  • 2 tbsp Maple Syrup
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Ketchup
  • 1 tsp Vegan Worcestershire Sauce
  • 1/2 tsp Hot Sauce like Frank's Red Hot

Instructions

  1. Preheat the oven to 350 and line a baking tray with parchment paper.

  2. Drain excess water from tofu and use a box grater or food processor with grater attachment to shred the tofu.

  3. Mix the olive oil, soy sauce, chipotle chili powder, paprika, and cumin together in a small bowl. Pour this mixture over the shredded tofu and gently toss to evenly coat the tofu.

  4. Spread the seasoned tofu evenly over the prepared baking tray. Bake for 30 minutes, stirring and flipping the tofu with a spatula halfway through.

  5. While the tofu is baking mix together the ingredients for the South Carolina style mustard BBQ sauce. Add the sauce to a small skillet and cook for about 5 minutes.

  6. After the tofu has baked carefully mix it together with the BBQ sauce and serve.
