Vegan Buffalo Potato Salad

Classic potato salad is a staple for summer BBQs and picnics, but if you’re looking to shake things up at your next cookout, this Vegan Buffalo Potato Salad is the answer. It combines the creamy, comforting texture of a traditional potato salad with the tangy, spicy kick of buffalo sauce.

The best part? It adds an extra layer of flavor without being overwhelmingly spicy. However, if you’re a “heat seeker,” feel free to add an extra splash of hot sauce. Don’t let me stop you from making your potato salad as hot as a Southern summer!

Why You’ll Love This Vegan Buffalo Potato Salad

Most potato salads rely solely on the potatoes for texture, but we’ve added grated carrots and finely diced red cabbage. These vegetables provide a refreshing crunch that perfectly offsets the creamy buffalo dressing. Plus, the vibrant purple and orange colors make this dish look beautiful on a picnic table.

Serving Suggestions

This side dish is incredibly versatile. It pairs perfectly with:

  • Grilled Veggie Burgers: The spice of the buffalo sauce complements smoky grilled flavors.

  • Corn on the Cob: A sweet, buttery contrast to the tangy salad.

  • Fresh Celery Sticks: For an extra nod to the classic buffalo wing experience, serve this potato salad with a side of crisp celery.

Cooking Tips

  • Potato Choice: We use small red potatoes because they hold their shape well after boiling. If you prefer a creamier texture, Yukon Golds are a great alternative.

  • Chill Time: While you can eat this warm, the flavors really meld together after about two hours in the fridge.

  • Vegan Mayo: Any high-quality plant based mayonnaise will work to create that rich, velvety base.

Frequently Asked Questions

Can I make this potato salad ahead of time?

Yes! In fact, we recommend it. While you can enjoy it warm, letting the salad chill in the refrigerator for at least two hours allows the buffalo sauce and vegan mayo to fully meld with the potatoes. It is a great “make-ahead” dish for parties.

What are the best potatoes to use?

We suggest using small red potatoes because they are waxy and hold their shape well after boiling. If you prefer a softer, creamier texture that breaks down slightly into the dressing, Yukon Golds are an excellent alternative.

Is this potato salad very spicy?

The recipe as written uses a mild buffalo sauce to provide a tangy kick without being overwhelming. If you are a “heat seeker,” you can easily customize the spice level by adding an extra splash of your favorite hot sauce or a pinch of cayenne pepper.

How do I store leftovers?

Store any remaining potato salad in an airtight container in the refrigerator. It will stay fresh and delicious for up to 3–4 days. Give it a quick stir before serving again to redistribute the dressing.

Can I add extra protein?

Absolutely. If you want to make this a heartier meal, try adding chickpeas or even some crispy vegan “chicken” nuggets tossed in a little extra buffalo sauce.

I love potato salad. It always reminds me my childhood, when my Mum made a big box of it to take with us to the swimming pool in summer. I like the idea to put grated carrots and red cabbage inside. What is a buffalo sauce like? I don ´t think I ever tried it.
