    Hello March!

Goodbye February, Hello March! Sorry for being a little late with post. Things have been a little crazy around here recently so I am going to keep this short. What do you think about the changes to the blog? If you hadn’t noticed our old blogger site was down for about a week so we could relaunch on our own domain. We made this change in hopes that it would make it easier for people to find us and to make the organization of recipes better.  It’s still a work in progress. Pretty exciting stuff!? Last month was so short and went by pretty quickly. I have been slowing getting…

    Apricot Salad

Lets face it salads can be boring. Sometimes I am just not in the mood for salad to be the only thing I can order to eat at a restaurant. But on the other hand I love a good salad bar. I love when I am in control of my own salad destiny. Sometimes I crave fresh greens. Today was one of those days so I whipped together this beauty. This Apricot Salad is simple and refreshing. The brightness of the citrus dressing shines through. Walnuts and hemp seed add a nutty flavor and add texture that pairs well with the dried apricot in the salad.  If you like this…

    Fruit and Chocolate Board

Have you seen these amazing vegan charcuterie platers and appetizer trays and wondered how anyone could put them together? It can seem overwhelming but it’s something anyone can do. It’s just about filling the space and trying to balance foods. For this board I chose to limit myself to fruits, nuts, and chocolate for a sweet paring.  By limiting myself to this theme I am already making my tray more cohesive. Start with the one thing you really want to shine and build the board around that. I wanted to use this vegan fig salami that I just bought online. It is from Hellenic Farms. It’s naturally sweet but the…

    Goodbye January Hello February

Goodbye January! Hopefully February is warmer month because I am so done with the brutal cold. I remember this time last year being able to hiking in tank tops! I am also so done with feeling like a slug. I cut back on my yoga and hiking almost completely this past month and I have been struggling to let my body heal because I want to get rid of this nasty lingering cough. I did have some fun this month though. A long weekend trip to South Florida helped cure my winter blues. Check out my post about the amazing Brunch at Plant in Miami if you haven’t already. I…

Buffalo Seitan Wings in the Air Fryer

Eric bought me an air fryer for Christmas and we can’t stop playing with it. Do you have one? It’s just as cool as that Easy Bake Oven you played with as a kid. It seems to work like magic. I Know Its Not Magic but don’t spoil my fun. I have a new toy to play with. If you haven’t already noticed we make a lot of seitan at our house. One of the things we like to do with it is fry it. Not so healthy, right? The air fryer is a game changer.  It’s way healthier, faster and with less mess to clean up afterward. With the…

    Brunch at Plant in Miami

I spent the long weekend in South Florida. It was just a quick solo trip to visit family and friends but it was so nice to escape to a warmer climate for a few days. Sunday we went to brunch at a mostly raw plant-based vegan restaurant called Plant in the Wynwood neighborhood of Miami. The restaurant is in an unbelievable location. The Wynwood district is so vibrant and colorful it’s walls are covered in murals but Plant is tucked away in a tranquil urban garden called The Sacred Space. The weather was perfect so we were able to sit outside by the reflecting pool and soak in the sunny…

    Vegan Smoked Seitan Brisket Sliders

It has been a cold week here. Really bitter cold for the south lows in the teens and highs in the 30s all week. After a while of being cooped up inside we started feeling a little stir crazy and wanted to do something anything outside so Saturday when it was a little warmer (mid 40s) we decided it was a perfect day to fire up the smoker out back and smoke some seitan. To make the Seitan Brisket you need: 1 cup vital wheat gluten 1 tbsp rice flour 1/4 cup nutritional yeast 1 vegan beef bouillon cube crumbled up 1 cup water 1 tbsp soy sauce 1 tsp…

    Hello 2018!

Goodbye 2017! I have to admit 2017 was a pretty good year for us even if I have spent the last week of it sick. I woke up Christmas morning not felling so great and then we discovered that our oven was broken. So it has been a bit of a crumby week but Eric fixed the oven with a replacement part that arrived yesterday and I am starting to feel better. I get a little sad this time of year when when the Christmas lights start to come down. There is so much build up that when it’s over its a bit of a shock. I don’t really believe…
