Vegan Smoked Seitan Brisket Sliders
It has been a cold week here. Really bitter cold for the south lows in the teens and highs in the 30s all week. After a while of being cooped up inside we started feeling a little stir crazy and wanted to do something anything outside so Saturday when it was a little warmer (mid 40s) we decided it was a perfect day to fire up the smoker out back and cook some Smoked Seitan Brisket. Who says meat-eaters get to have all the fun? We love to use the grill and smoker to add a charred smoky barbeque flavor. If you don’t have a smoker you could use flavored…

Vegan Peanut Butter Chocolate Chip Cookies
Chocolate chip cookies have always been Eric’s favorite. He was a little bummed out when he discovered they were not on my list to make this year so he decide to make his own. Eric is even less of a baker than I am so I was pretty shocked when I came home from the gym to find him with the first batch of these vegan peanut butter chocolate chip cookies in the oven. If Eric can bake these you can too! They were super easy to make. Simply mix together: 1/2 cup coconut oil 2/3 cup sugar 2/3 cup peanut butter 1/3 cup brown sugar 1/2 cup plant based…

Biscuit Bar for Christmas Morning Brunch
If you have a crowd to feed at your house over Christmas weekend a biscuit bar might be a fun easy option for breakfast. Christmas morning is magical, but it can also be chaotic. I’ve found that a DIY biscuit bar is the easiest way to feed a crowd without spending the whole morning in the kitchen. While we kept this Christmas setup low-key, if you’re looking for a deep dive into the best toppings, Southern-style sides, and setup tips, check out my full guide on how to host a southern biscuit bar. Choose Your Spreads We kept our biscuit bar pretty simple and low key. I offered stone ground…

Lemon Pistachio Vegan Cookies
These cookies are a nice change of pace because they are not overly sweet. The fresh citrus brightens the tangy flavor of these chewy vegan cookies. This recipe makes 24 cookies and uses an electric mixer. You don’t have to have an expensive stand mixer any old hand mixer will do. One of my favorite things about this recipe is I was able to use my Squirrel Nut Grinder from World Market for the first time. It was an impulse buy when I saw him I just knew I had to have! He is so adorable! If you don’t have a nut grinder you can chop the pistachios in a…

Moose Drops – Vegan No Bake Cookies
These vegan no bake cookies are super easy and quick to make. They are called Moose Drops because well…they look like moose poop. They may look a little unsightly but they smell and taste amazing. Our whole kitchen smelled like rich hot coco while I was making these treats. To make Vegan Moose Drops you need: 2 cups quick oats 1/2 cup unsweetened shredded coconut 1 cup sugar 1/2 cup coco powder 1/2 cup vegan butter 1/2 cup plant based milk 1 tsp vanilla parchment or wax paper Lay out a large sheet of wax paper on your counter top. In a large bowl mix together quick oats and coconut…

Roasted Carrots with Farro
Farro has a reputation of being hard to cook but we really like it. I enjoy the chewy texture of it. We have been making it in place of brown rice or quinoa. Farro also has more protein and fiber than other grains like quinoa. I bought a small bunch of rainbow carrots and wanted to try to do something special and healthy with them so I decided slow roasting and serving over farro would do the trick. Who doesn’t love roasted carrots? Roasted carrots with farro is easy to make. It’s a simple and warm comforting dinner. What is Farro? Farro is a nutrient-dense ancient grain with a nutty…

Vegan Pesto Flatbread with Radish Salad
I love pizza so much that sometimes I have to trick Eric into eating it by calling it flatbread. This vegan pesto flatbread was so good. Really happy with the way it turned out. Eating salad on your pizza, I mean flatbread, was is also a great idea. Who doesn’t love that? We had some left over pizza dough from some breadsticks we made the other day and didn’t want it to go to waste. I also really wanted to try out this vegan organic basil pesto sauce that I bought at Sprouts because it looks so creamy. To make this pesto flatbread you need: Pre-made pizza dough Pesto sauce…

Vegan Nashville Hot Chicken Sliders
Hot Chicken is a Nashville specialty. Honestly is seems like the whole south has co-opted it as their own. Even Birmingham has a Hot Chicken restaurant. Basically it is a twist on classic southern fried chicken coated with super hot cayenne pepper sauce. Did I mention it’s really hot? So to veganize we made Chick’n Fried Seitan and slathered it with sauce. The end result is these amazing vegan hot chicken sliders. We started by making a batch of of our Basic Chick’n Seitan. This can be done ahead of time. Any “Chicken” flavored seitan will work here. We sliced the cooked seitan into small cutlet pieces. Some of the…
