    Vegan Corn Dog Poppers

It’s fall in the South and that means Football. Fall also makes me think of country fair foods…like funnel cake and corn dogs. These Vegan Corn Dog Poppers are the perfect tailgate party food. Also vegan corn dogs are a simply fun snack! They are fast, easy to make, and super portable. I love on the go food that people can eat while they are walking around and mingling at a party. Eric says they are a a great choice for walking around food because they hold together well enough to shake at people. I don’t know why you would want to shake your food a people but that is something…

    Healthy Chocolate Peanut Butter Dip

This Chocolate Peanut Butter Dip is a healthy afternoon snack option. It is Dairy Free and Vegan but it still feels rich and indulgent. My Chocolate Peanut Butter Dip is super quick to whip together. It took me less than ten minutes to make. You can make it in advance but it is best when blended right before serving. Chocolate dip? Yes, Please! It is so creamy and smooth! I love this dip because it is the perfect dip for apple slices. I often take apple slices and regular peanut butter to work with me for a snack so sometimes I get a little tired of the plain peanut butter. This…

End of Summer Stone Fruit Salad

I have a love/hate relationship with summer so I have mixed emotions about the end of summer. I love the making trips to the local farmers market and the abundance of seasonal fruits and veggies but I hate the heat and humidity. For many people Labor Day marks the end of summer. It’s the last excuse to throw a great summer bash. I love any excuse to feed people I love. This salad was inspired by that spirit. A stone fruit is any fruit with a “pit” inside. Get creative and use any stone fruit you like. I used cherries, plums, and nectarines but peaches would also be amazing in…

    Southern Tomato Sandwich

The tomato sandwich is a southern classic. It is simple, so easy to make, and so so good. The classic version that I grew up with is just basic white bread, mayo, and tomato but this version of a southern tomato sandwich is a little more modern. Elevate your southern tomato sandwich by using quality ingredients. You want to choose a soft bread with medium slices. The bread shouldn’t be too thick because you want the tomatoes to be the star of this sandwich. The quality of the tomatoes you use matters. Nothing beats a fresh ripe tomato from your garden or local farmers market during tomato season. The tomato…

    Vegan Tomato Stack Salad

Tomatoes are fancy y’all. Beautiful ripe summer tomatoes excite me. I wanted to make something more elegant with tomatoes I bought this weekend. There is a restaurant in town, Hot and Hot Fish Club, that is know for it’s stacked tomato Salad. The Hot and Hot Tomato Salad is just one of those iconic dishes that Birmingham is known for. This restaurant will happily accommodate vegetarians. I have enjoyed the seasonal veggie plate there a few times before but the dish they are best known for the Hot and Hot Tomato Salad is not veggie friendly due to bacon, field peas cooked with ham hock, and a buttermilk dressing. So…

    Easy Vegan Peach Salsa

Have you ever had the pineapple salsa from Whole Foods? It’s so good I love it! Some times its is too acidic for me to eat much of though. Also since pineapples don’t exactly grow on trees here in Alabama I decided to make some healthy vegan Peach Salsa. Peach Salsa may sound weird but it is light and refreshing. You can make it crazy spicy or with no spice at all. Just adjust how much jalapeño put into your salsa. Chips and Salsa anyone? Yes please. Love Peaches? Buffalo Seitan Salad

You know I love a good salad. Too many people think salad is just lettuce on a plate but it is so much more than than that. A good salad should have layers of flavor and texture. So today I present to you my Buffalo Seitan Salad. We make a batch of basic seitan almost weekly. It has just become part of our weekly meal prep on Sundays. We don’t always have a meal planned for it but Eric always takes his lunch to work so we like to have it around for his lunches. Today we had a little extra so I turned it into buffalo seitan salad. Like things…

Dairy Free Peaches and Cream Frozen Treats

These dairy free peaches and cream frozen treats are to die for. I love eating out of tiny little mason jars. I used small eight ounce jars. I call them half jars. They would be super cute at a backyard party or a picnic in the park. Best part is you can make them ahead of time and then just grab them out of the freezer and serve. These vegan treats need to freeze for at least two hours but you can also make them the day before and freeze them overnight. What a perfect summer treat!   Looking for more recipes with peaches?
