Vegan Stuffed Sweet Peppers

These vegan stuffed peppers are perfect for parties! The cute little mini sweet peppers are stuffed with herby cashew cheese to create a tasty vegan bite. I have seen these made stuffed with cream cheese and bacon and thought how easy it would be to veganize. I want vegan stuffed everything! So yummy! I love the color in these too. Use what ever colors you want but I like the mixed bags of peppers. The mini sweet peppers are not not that spicy. They are milder than bell peppers. If you want to make this with more heat try stuffing jalapeños or adding hot sauce to the cashew cheese. 

Vegan stuffed peppers are easy to make. Making the cashew cheese is pretty simple if you have a high power blender. That part only takes about 10 minutes. The more tedious time consuming part of this recipe is prepping and stuffing the peppers but I a have a fun little trick to make it easier. After you cut the top off your peppers use a grapefruit spoon to clean out the seeds. It will scrape out the seeds and make it easier to stuff. Plus grapefruit spoons are the perfect smaller size for this job.

Ingredients

  • 2 lb mini sweet peppers
  • 2 cups cashews soaked overnight
  • 1 lemon
  • 1 tsp salt
  • 1 tsp nutritional yeast flakes
  • 1/4 cup sun dried tomatoes chopped
  • 2 tbsp chives chopped
  • 2 tbsp cilantro chopped

Instructions

  1. Soak your cashews overnight in water. Then drain and rinse them. This step will make the cashew cheese smoother.

  2. In a high power blender of food processor combine: 2 cups of cashews, the juice of one lemon, 1 tsp salt, 1 tsp nutritional yeast, and 1/2 cup of water. Combine until smooth. You may have to stop and scrape down the sides of the blender. This step takes me about 10 minutes to get a smooth mixture in my Vitamix.

  3. Add the chopped sun dried tomatoes, chives, and cilantro to the blender and process to mix in completely.

  4. Cut the tops off of the mini sweet peppers and use a grapefruit spoon to scrape out the seeds. 

  5. After cleaning your peppers use a small spoon to stuff them with the cashew mixture.
