Vegan Sweet Potato Mac and Cheese

Ingredients

  • 8 oz Macaroni Noodles about half a box
  • 2 Small Sweet Potatoes
  • 1 can Unsweet Coconut Milk
  • 1 tbsp Nutritional Yeast
  • 2 tbsp Dijon Mustard
  • 1 tsp Smoked Paprika
  • 1/4 tsp Turmeric
  • 1/4 tsp Salt
  • 2 or 3 drops Hot Sauce
  • 1 tbsp Plant Based Butter melted
  • 1/2 cup Breadcrumbs

Instructions

  1. Boil salted water and cook your macaroni noodles according to package instructions. Drain and set aside.

  2. Cook the sweet potatoes.

    You can easily cook the sweet potatoes in the microwave for 6 to 8 minutes (flipping halfway through) until soft, then let it cool slightly before removing the skin.

    or peel and cube sweet potatoes, then boil until fork-tender (about 10–15 minutes). Drain well.

  3. In a blender (like a Vitamix), combine: cooked sweet potatoes, coconut milk, nutritional yeast, Dijon mustard, turmeric, smoked paprika, hot sauce, and salt.

    Blend until completely smooth and looks like a melted cheddar sauce.

  4. Preheat the oven to 375°F.

  5. Pour the sauce over pasta and stir until fully coated. Transfer prepared mac and cheese to a baking dish.

  6. Mix breadcrumbs with melted plant based butter. Top the vegan mac and cheese with the breadcrumbs.

  7. Bake 15–20 minutes until golden brown.
