
Prep the strawberry compote ahead of time. This can be done the day before. Make a batch of homemade strawberry compote (Strawberries, sugar, and lemon juice). Let it cool completely. Parfaits layer best with chilled compote.
Build the layers of the parfaits in glasses, jars, or small bowls, spoon a layer of yogurt into the bottom. Add a scoop of strawberry compote, then a sprinkle of granola.
Repeat until your container is full, adding fresh strawberry slices on top if desired.
Add any optional finishing touches. Drizzle with honey or maple syrup if you want a bit more sweetness. Add a pinch of hemp seeds, chopped nuts, or a sprig of fresh mint for a pretty finish.
Serve immediately for the crunchiest texture or refrigerate up to 24 hours. Keep the granola separate until serving if you want it to stay crisp and just sprinkle on top.
