In a separate smaller bowl, whisk together the vegan mayonnaise, apple cider vinegar, sugar, salt, and black pepper until smooth.
Pour the dressing over the cabbage mixture and toss until everything is well coated.
Cover and refrigerate for at least 30 minutes before serving to let the flavors come together.
