
In a small bowl or jar, whisk together all the ingredients for the salad dressing (olive oil, lemon balsamic vinegar, lemon juice, Dijon mustard, fresh herbs, salt, and pepper).
Or you can use a small blender to mix together. This is my preferred method for blending salad dressing.
Add arugula to a large serving bowl.
Pour in just enough dressing to lightly coat the leaves and toss gently.
Sprinkle the salad with Parmesan shavings and toasted pine nuts.
Serve immediately to keep lettuce crisp and fresh.
