Dairy Free Peaches and Cream Frozen Treats
These dairy free peaches and cream frozen treats are to die for. I love eating out of tiny little mason jars. I used small eight ounce jars. I call them half jars. They would be super cute at a backyard party or a picnic in the park. Best part is you can make them ahead of time and then just grab them out of the freezer and serve. These vegan treats need to freeze for at least two hours but you can also make them the day before and freeze them overnight. What a perfect summer treat! Looking for more recipes with peaches? Vegan Peach Upside Down Cake
My grandmother used to make an amazing pineapple upside down cake. Maybe thats why I love upside down cake. The name is fun too. There is just something very whimsical about the idea of an upside down cake. I love to use seasonal fruit so it was an easy choice to use peaches for this vegan upside down cake. Alabama is all about Chilton County peaches Georgia may be known as the peach state but here in Alabama we take our peaches pretty serious too. If you are ever driving down I-65 South to the beach look for the giant peach water tower in Clanton. Stop and buy some peaches.…

Fruit and Chocolate Board
Have you seen these amazing vegan charcuterie platers and appetizer trays and wondered how anyone could put them together? It can seem overwhelming but it’s something anyone can do. It’s just about filling the space and trying to balance foods. For this board I chose to limit myself to fruits, nuts, and chocolate for a sweet paring. By limiting myself to this theme I am already making my tray more cohesive. Start with the one thing you really want to shine and build the board around that. I wanted to use this vegan fig salami that I just bought online. It is from Hellenic Farms. It’s naturally sweet but the…

Vegan Peanut Butter Chocolate Chip Cookies
Chocolate chip cookies have always been Eric’s favorite. He was a little bummed out when he discovered they were not on my list to make this year so he decide to make his own. Eric is even less of a baker than I am so I was pretty shocked when I came home from the gym to find him with the first batch of these vegan peanut butter chocolate chip cookies in the oven. If Eric can bake these you can too! They were super easy to make. Simply mix together: 1/2 cup coconut oil 2/3 cup sugar 2/3 cup peanut butter 1/3 cup brown sugar 1/2 cup plant based…

Lemon Pistachio Vegan Cookies
These cookies are a nice change of pace because they are not overly sweet. The fresh citrus brightens the tangy flavor of these chewy vegan cookies. This recipe makes 24 cookies and uses an electric mixer. You don’t have to have an expensive stand mixer any old hand mixer will do. One of my favorite things about this recipe is I was able to use my Squirrel Nut Grinder from World Market for the first time. It was an impulse buy when I saw him I just knew I had to have! He is so adorable! If you don’t have a nut grinder you can chop the pistachios in a…

Moose Drops – Vegan No Bake Cookies
These vegan no bake cookies are super easy and quick to make. They are called Moose Drops because well…they look like moose poop. They may look a little unsightly but they smell and taste amazing. Our whole kitchen smelled like rich hot coco while I was making these treats.
