Goodbye July, Hello August! Summer I am so done with you. Once I get past 4th of July I am officially done with Summer and specifically the Summer heat. We went on a super fun road trip to Asheville, NC. Asheville is a vegan and beer heaven in the South. There are so many great food options and breweries. We did a couple of touristy things like drive on the Blue Ridge Parkway and visit the Biltmore estate to see the Chihuly glass exhibit. But basically all we did on the trip was eat and drink. Goodbye June, Hello July! June was pretty low key for us. We didn’t do anything too exciting. We actually spent a lot of time at home this month. I have been testing a lot of different recipe ideas for Vegetarian South. The post I am most proud of in June though is a recipe Eric developed. He is the brain and the brawn behind most of the seitan recipes on the site. I might give him an idea of what I am envisioning but he does all the hard work developing the seitan recipes. Goodbye May, Hello June! Summer is in full swing here! We have been grilling like crazy and our garden is in bloom. Our basil plants are big and bushy and I think we will be able to pick our first tomato next week. I got a new watering can! I know super exciting stuff! I named him Greeny. I can’t wait until we have tons of tomatoes so I can make more of this tomato salad. It’s a great side dish for parties and barbecues. I am working on a few more dishes like this right now. Goodbye April, Hello May! I hate the heat and humidity of Southern Summers. So I have been trying to soak in as much of this nice Spring weather as possible before Summer hits full force. I love spending time outside even if it is just in my back yard. We have been doing a lot of vegan grilling. What is your favorite veggie to grill? Hello April! Did everyone have a good Easter yesterday? I feel like I was cooking all day long but we had an amazing dinner. I made Maple Dijon Roasted Carrots from Closet Cooking. The flavor was amazing. The roasted carrots were the star of our meal. I loved them! We will be making these again for sure. I also cooked Vegan Spring Potato Salad from This Savory Vegan. Eric liked this more than I did but this recipe is also a keeper. This potato salad will be great for picnics and when we have and endless supply of fresh basil growing out back this summer. Goodbye February, Hello March! Sorry for being a little late with post. Things have been a little crazy around here recently so I am going to keep this short. What do you think about the changes to the blog? If you hadn’t noticed our old blogger site was down for about a week so we could relaunch on our own domain. Goodbye January Hello February
Goodbye January! Hopefully February is warmer month because I am so done with the brutal cold. I remember this time last year being able to hiking in tank tops! I am also so done with feeling like a slug. I cut back on my yoga and hiking almost completely this past month and I have been struggling to let my body heal because I want to get rid of this nasty lingering cough. Hello 2018!
Goodbye 2017! I have to admit 2017 was a pretty good year for us even if I have spent the last week of it sick. I woke up Christmas morning not felling so great and then we discovered that our oven was broken. So it has been a bit of a crumby week but Eric fixed the oven with a replacement part that arrived yesterday and I am starting to feel better. I get a little sad this time of year when when the Christmas lights start to come down. There is so much build up that when it’s over its a bit of a shock. I don’t really believe…

Goodbye November! I hope everyone had a wonderful Thanksgiving! Rather than staying at home and cooking we went went out of town this year. It was really nice to take a mini vacation in Chattanooga. I felt like I was able to relax and slow down a bit. Thanksgiving day we went for a walk at the Chickamauga Battlefield. It is maintained by the national park service and they have around 50 miles of trails. We were surprised that the visitor’s center was open on Thanksgiving but happy because we were able to grab a trail map. The battlefield was a fun place to go to enjoy being outside. It…

Goodbye October! Saying goodbye to October makes me sad. It’s one of my favorite months full of fun fall activities and I can not believe it is November already. What are your plans for Thanksgiving? The holidays are right around the corner. It’s a little scary right? As much as I love Christmas and all that comes with it the holidays can be a little stressful and overwhelming.
