Chopped Seitan Salad
I love a good salad! The chopped seitan makes this salad more of a full meal than just a side. Plus it’s a great use for leftover seitan. Waste not want not. We made seitan ribs this past weekend and chopped up the leftovers. The smoky BBQ flavor was amazing on the Chopped Seitan Salad. Yum!
If you have a food processor use it to chop the seitan. It shreds it in to fine little piece and the texture is really nice. Don’t have a food processor or don’t want to drag it out? No problem! Just chop it up finely with a knife. You may not get the same shredded look but it will still taste yummy.
We used Follow Your Heart Vegan Ranch dressing. I love this product but it is a little thick. To thin it out I poured some into a small bowl and mixed in dash of plant based milk. Why is runny ranch so much better? It reminds me of the ranch dressing at a salad bar. If you want to make your own Ranch dressing Minimalist Baker has a good recipe for an easy oil free cashew based one.
Add all your favorite toppings! We added cherry tomatoes, broccoli, and green onions. Vegan cheddar shreds, black beans, corn, and avocado would be amazing optional toppings.
Chopped Seitan Salad
Ingredients
- 1 head romaine lettuce
- 1/2 cup cherry tomatoes cut into halves
- 1/2 cup broccoli finely chopped
- 1 tb diced green onion
- 1/2 cup leftover seitan
- Vegan ranch dressing
Instructions

Start by chopping up the seitan in the food processor. This takes about 30 seconds. If you don't have a food processor you can chop by hand with a large knife but the food processor is faster and will result in finer smaller pieces.

Chop the romaine lettuce and divide into two plates. Top with other ingredients.
Recipe Notes
