Vegan Pasta Salad In A Jar

Have you ever made a salad in a mason jar? It’s so easy! Mason jars salads are great for picnics or weekday office lunches. Our pesto flavored vegan pasta salad in a jar is quick and simple to make. Everyone has a few old unused mason jars sitting around the house right? Cue southerns shaking their heads yes in unison. They are just so dang useful. All you have to do is layer a few simple ingredients in your mason jar. Then just shake the jar up or mix in a serving bowl when you are ready to eat. Easy peasy any you have yourself a vegan pasta salad in a jar.

I am obsessed with the idea of picnics. I day dream about picnics way more than your average person. That being said I don’t actually go on picnics that often but I like to think that I am a picnic type of person. One of my favorite books is The Picnic. It isn’t strictly vegetarian but it is a beautiful book filled with tons of ideas in it that can easily be modified. My love of all thing picnic was the inspiration for this recipe.

Speaking of things I love… I am also very passionate about pesto. We make it a lot ourselves in the summer but when basil is not abundant or in season I like to cheat by using pre-made pesto. Spouts carries a vegan pesto sauce that I love! I use that in this recipe for vegan pasta salad in a jar. Feel free you use your favorite pesto whether it’s homemade or not.

Vegan Pasta Salad In A Jar

Ingredients

  • 1 1/2 cup cooked pasta we used macaroni noodles
  • 1/2 cup vegan pesto sauce homemade or store-bought
  • 1/2 cup chopped broccoli
  • 1 cup quartered cherry tomatoes

Instructions

  1. Step one is to cook your pasta. This can be done in advance the day before. If you cook it in advance you won't have to wait on it to cool.

  2. Add 1/2 cup of vegan pesto sauce to the bottom of your mason jar. You can make your favorite pesto recipe or use store-bought.

  3. Then add in 1 1/2 cups of cooked and cooled pasta noodles.

  4. On top of the pasta layer with chopped broccoli and tomatoes.

  5. Put the lid on your mason jar and you are ready to go! Just shake in the jar right before eating or you can pour into a bowl to mix up the pasta salad.
