Easy Vegetarian Breakfast Casserole
This Easy Vegetarian Breakfast Casserole is perfect for weekends! The prep time is less than 15 minutes and then you just throw it in the oven to bake. Super easy. It is packed full of protein and yummy veggies. Save the leftovers for week day mornings when you are too busy to cook. Individual casserole servings reheat well in the microwave. Sometimes we even freeze single servings and save for another week.
Easy Vegetarian Breakfast Casserole
To make use a 9x13 casserole dish.
Ingredients
- 1 cup tomato diced
- 2 cups broccoli finely chopped
- 2 cups shredded cheddar cheese
- 12 eggs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp onion powder
- 1 tsp red pepper flakes
- 6 Morningstar Veggie Breakfast Sausage Patties Optional
Instructions

Preheat the oven to 350 and lightly grease a 9x13 casserole baking dish.

Chop the broccoli (about 2 crowns) in the food processor this should yield about 2 cups of finely chopped broccoli. Dice 2 or 3 small tomatoes to yield one cup of diced tomatoes.

In a large mixing bowl whisk together a dozen eggs with salt, pepper, onion powder, and red pepper flakes.

Then add the veggies and shredded cheese to the eggs and mix together.

If you want to add the Morningstar veggie breakfast sausage place the frozen patties on a plate and microwave for one minute to defrost. Then you can chop them or crumble them and mix into the eggs.

When everything is mixed together pour it into the casserole dish and bake at 350 for 45 minutes.
