Tofurky Monte Cristo Sandwich

So what do you do with all those leftovers….how about a sandwich?

To make this we used:

  • sliced sourdough bread
  • 1/2 cup milk
  • 1 egg
  • 1/2 TBSP butter
  • couple slices leftover Tofurky roast
  • leftover cranberry sauce (we shared our recipe for this yesterday)
  • lettuce 
  • thin slice of brie cheese for each sandwich 

Wisk the egg and milk together. Then one slice at a time dip the bread to fully cover both sides. You don’t want it to get soggy so don’t leave it in just dip when ready to use that piece. Melt a dab of butter in a pan and cook each side of the bread for a few minutes until it browns. When you have your bread cooked and ready on a plate add the brie to the bottom and top with a warmed slice of Tofurky. Drizzle some cranberry sauce over that and top with lettuce and bread.
