Minestrone Soup

It’s soup weather so here you go……

This makes a large batch. We have been eating it all week. Guess I need to freeze the rest for later.

You will need:

  • 1 white onion roughly chopped
  • 1 clove of garlic chopped
  • 2 celery stocks
  • 8 carrots chopped
  • 1/4 cup liquid aminos 
  • 1 bay leaf
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tea sp sage
  • 1/4 cup red wine
  • 1 large 28oz can of crushed tomatoes 
  • 1 can 15oz great northern beans
  • 1 cup ditalini pasta

Start by adding 8 cups of water to a large stock pot. Add the onion, carrots,garlic and celery then bring to a boil. We leave the celery in large pieces and discard it after cooking but if you like chop up small and leave it in. Reduce the heat to a low simmer add the spices and cook for about 30 minutes. Then add the tomatoes, beans, and wine. Simmer for another 15 minutes and then add the pasta. Cook until the pasta is done.
