Butternut Squash Bake

  • 1 large butternut squash
  • 2 cups chopped golden potatoes
  • 2 shallots
  • 1 tea sp ground sage
  • 1/2 tea sp smoked paprika
  • 1 tb sp olive oil
  • salt & pepper

Cut the butternut squash and potatoes into chunks. Dice the shallots and add to a baking dish with the squash and potatoes. Toss the vegetables with the sage, paprika, oil, and a dash of salt and pepper. Mix until evenly coated. Bake covered at 350 for 45 minutes.
