Black Eyed Pea Salad
Are you excited for the new year? I know I am this past year has been tough. In the south we eat black eyed peas and greens to start the new year off right. To welcome the new year I wanted a modern twist on this tradition so I made a Black Eyed Pea Salad with fresh greens. This salad uses prepared back eyed peas. You could use canned but it is so easy cook your own black eyed peas in an instant pot if you have one. If you cook your own you won’t have to read labels to make sure your black eyed peas aren’t seasoned with meat. Easy peasy.
Black Eyed Pea Salad
Ingredients
- 4 cups mixed greens kale, watercress, arugula, spinach
- 1/2 cup prepared black eyed peas
- 4 mini sweet peppers
- 1/2 cup cherry tomatoes
- 1 tbsp pepitas
- 1/2 cup cilantro
- 2 limes
- 2 tbsp avocado oil
- pinch salt & pepper
Instructions

Thinly slice the mini sweet peppers. Cut the cherry tomatoes in half.

Add the sliced sweet peppers and cherry tomatoes to a mixing bowl. Add in four cups of mixed greens, half (1/4 cup) of the cilantro, and 1/2 cup black eyed peas.

Use the other half (1/4 cup) of cilantro to make the salad dressing. Blend in a small food processor or blender with the juice of two limes, two tbsp avocado oil, a pinch of salt and pepper.

Toss the salad with the dressing. Top with pepitas and serve.
