Goodbye June, Hello July!
June was pretty low key for us. We didn’t do anything too exciting. We actually spent a lot of time at home this month. I have been testing a lot of different recipe ideas for Vegetarian South. The post I am most proud of in June though is a recipe Eric developed. He is the brain and the brawn behind most of the seitan recipes on the site. I might give him an idea of what I am envisioning but he does all the hard work developing the seitan recipes. His Vegan Seitan Kebabs with Tumeric Sauce turned out so yummy! It started out of an idea to make a greek kofta seitan but it evolved when Eric added the tumeric sauce. The sauce makes the dish feel whole. Trust me I didn’t complain having to eat this multiple times until we got the recipe just right.
The past week I have been focused on getting ready for a road trip to Asheville, NC. I have my road trip snacks packed and I’m ready to go! I’m super excited about eating at some vegan restaurants but the main reason I wanted to go to Asheville this summer is to see the Chihuly exhibition at the Biltmore. The art exhibition is at the Biltmore in the garden until October. Chihuly is a glass sculptor from the pacific north west. If you aren’t familiar with his work it’s worth checking out. I saw one of his exhibitions in Miami a few years ago. I love the pops of color but also how the instillation blends with the landscape.
