Vegan Pesto Flatbread with Radish Salad
I love pizza so much that sometimes I have to trick Eric into eating it by calling it flatbread. This vegan pesto flatbread was so good. Really happy with the way it turned out. Eating salad on your pizza, I mean flatbread, was is also a great idea. Who doesn’t love that?
We had some left over pizza dough from some breadsticks we made the other day and didn’t want it to go to waste. I also really wanted to try out this vegan organic basil pesto sauce that I bought at Sprouts because it looks so creamy.
To make this pesto flatbread you need:
- Pre-made pizza dough
- Pesto sauce
- Lettuce
- Radishes thinly sliced
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Juice of 1 lemon
- 1/2 tsp agave
- Hemp seeds
- Salt & pepper to taste
Shape pizza dough into desired shape and generously spread on a couple of tablespoons of pesto sauce. Bake the flatbread at 400 degrees for 20 minutes. Meanwhile you can make the salad dressing by mixing together olive oil, vinegar, lemon juice, agave, salt, and pepper. When ready to serve dress the lettuce and layer on top of the baked bread. Add your radishes and sprinkle with hemp seeds.
