Chopped Seitan Salad

Ingredients

  • 1 head romaine lettuce
  • 1/2 cup cherry tomatoes cut into halves
  • 1/2 cup broccoli finely chopped
  • 1 tb diced green onion
  • 1/2 cup leftover seitan
  • Vegan ranch dressing

Instructions

  1. Start by chopping up the seitan in the food processor. This takes about 30 seconds. If you don't have a food processor you can chop by hand with a large knife but the food processor is faster and will result in finer smaller pieces.

  2. Chop the romaine lettuce and divide into two plates. Top with other ingredients.

Recipe Notes

We used Follow Your Heart Vegan Ranch Dressing. I love this stuff but it is a little thick so I poured some into a bowl and mixed with a splash of plant milk to thin it out.
