Vegan Pineapple Casserole

Ingredients

  • 2 20oz cans pineapple tidbits drained but save 1/4 cup juice
  • 3/4 cup vegan sugar
  • 1/4 cup all purpose flour
  • 1 cup vegan cheddar cheese shreds We used Daiya shreds
  • 1 sleeve Ritz Crackers crumbled
  • 3 tbsp vegan butter melted

Instructions

  1. Pre-heat the oven to 350 degrees. 

  2. In a mixing bowl combine 3/4 cup sugar, 1/4 cup flour, 1/4 cup pineapple juice, 1 cup vegan cheese shreds. Then add in the pineapple tidbits and mix well.

  3. Transfer to a casserole baking dish. Top with the crumbled Ritz crackers to evenly cover. Then pour the melted vegan butter over the crackers.

  4. Bake in oven at 350 for 30 minutes.
