Vegan Stuffed Sweet Peppers

Ingredients

  • 2 lb mini sweet peppers
  • 2 cups cashews soaked overnight
  • 1 lemon
  • 1 tsp salt
  • 1 tsp nutritional yeast flakes
  • 1/4 cup sun dried tomatoes chopped
  • 2 tbsp chives chopped
  • 2 tbsp cilantro chopped

Instructions

  1. Soak your cashews overnight in water. Then drain and rinse them. This step will make the cashew cheese smoother.

  2. In a high power blender of food processor combine: 2 cups of cashews, the juice of one lemon, 1 tsp salt, 1 tsp nutritional yeast, and 1/2 cup of water. Combine until smooth. You may have to stop and scrape down the sides of the blender. This step takes me about 10 minutes to get a smooth mixture in my Vitamix.

  3. Add the chopped sun dried tomatoes, chives, and cilantro to the blender and process to mix in completely.

  4. Cut the tops off of the mini sweet peppers and use a grapefruit spoon to scrape out the seeds. 

  5. After cleaning your peppers use a small spoon to stuff them with the cashew mixture.
