Vegan Carrot Salad

Ingredients

  • 3 large carrots
  • 1/2 cup chopped pecans
  • 1/2 cup dried cranberries
  • 1/4 tsp salt
  • 1/4 cup vegan mayonnaise such as Just Mayo

Instructions

  1. Use the shredder function of your food processor to grate three carrots. This should yield three cups of shredded carrots. If you don't have a food processor you can do this by hand with a box grater but it will just take longer. 

  2. Mix the grated carrots with 1/2 cup chopped pecans, 1/2 cup dried cranberries, and 1/4 cup of vegan mayo. Mix well and add salt to taste.
